As a healthy breakfast or a tasty snack, granola has to be one of our favourite foods!

While store-bought versions can get quite pricey, none of them can even compete with homemade granola. 

We have made this recipe over and over and we seriously think it is the best you can find. And believe us, no need to be a chef to get it right. 

When your granola is cooked, let it cool down, add some toppings of your choice (if you fancy it) such as chopped chocolate, goji berries or dried cranberries, then store in a jar and enjoy!

The best ever granola

Ingredients

  • 300g rolled oats (you can use porridge oats but it's better with rolled oats)
  • 200g nuts (whatever you can find, pecans, walnuts, hazelnuts, cashews, almonds…), roughly chopped
  • 50g seeds (sunflower, chia, sesame, pumpkin)
  • 2 tbsp coconut oil, melted
  • 5 tbsp honey or maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp sea salt flakes

Method

  1. Place parchment paper on a large baking sheet. Heat the oven to 150°C.
  2. Place the rolled oats, chopped nuts and seeds in a large mixing bowl and mix.
  3. Add the melted coconut oil, maple syyup and vanilla extract and mix well until the oats and nuts are well coated. 
  4. Add the cinnamon and sea salt flakes and give it a last stir. 
  5. Transfer onto the baking sheet and spread to create an even layer.
  6. Bake for 10 minutes, then stir and bake for a further 10 minutes. Mix again and bake for a further 5 to 10 minutes if needed. You want the oats and the nuts to turn into a nice golden colour. 
  7. Remove from the oven and let cool completely before transferring into a clean jar. It can keep up to one month but let's be honest, it will be long gone.

Chef's tip: keep a close eye on the tray when it bakes as nuts burn really easily.

"This is a great recipe that works perfectly for pancakes too. Dave uses this recipe most weekends to make either pancakes or waffles for his daughters – the same batter works great for both.

To make waffles, you will need a waffle iron or waffle maker, but don’t let that put you off – we got ours for €20 online and it’s a great toy! We like to serve our waffles/pancakes with coconut yoghurt, homemade chocolate spread and berries, with a drizzle of maple syrup – just delish!"

Healthy waffles

Ingredients

  • 250g buckwheat flour/ other flour of choice
  • 2 teaspoons baking powder (1½ teaspoons if using white flour)
  • 1 teaspoon sea salt
  • 3 tablespoons maple syrup
  • ½ a banana or 2 tablespoons ground flax seeds
  • 3 tablespoons almond butter
  • 400ml rice milk
  • 1 teaspoon vanilla extract

Method

1. First step, turn on the waffle iron.

2. To make the batter, whiz all the ingredients together in a blender until smooth.

3. Once the waffle iron is hot, spray it with vegetable oil to prevent the waffles from sticking. Pour in the batter, ensuring that you have added enough to cover the full iron, and leaving a bit of room for the waffles to rise slightly.

4. Cook in the waffle iron until they turn nice  and brown. Remove and add toppings of your  choice (see intro, and see the photo for other serving ideas).

In their new book, Recipes for Happiness, The Happy Pear share an incredible recipe for pizza that won't make you feel guilty.

"How to make pizza that ‘tastes great and a little healthier’ was the motivation for this one, the boys say. There are lots of ways to make the base, and here we’re giving you a no-yeast recipe that is super-quick.

To be gluten-free, try buckwheat flour instead. The tomato sauce is full of flavour, to balance the dense wholemeal base. Our topping suggestions are pretty out there, but they are delicious and really work!"

So don't be shy, roll up your sleeves and give it a go!

Pizza three ways

Ingredients

For the base

  • 200g white flour
  • 200g wholemeal flour, plus extra for dusting
  • 2 teaspoons baking powder
  • ¾ teaspoon fine sea salt
  • 2 tablespoons oil
  • 220ml water

For the tomato sauce: (makes 500 g)

  • 8 sun-dried tomatoes 
  • 2 cloves of garlic 
  • 1 x 400g tin of chopped tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • ½ teaspoon sea salt
  • a pinch of freshly ground black pepper
  • 1½ teaspoons balsamic vinegar

Method

1. Preheat the oven to its maximum temperature.

2. Sift the flours and baking powder into a bowl, then add the salt and oil. Mix well in a circular motion, using your clean hands held in a claw-like shape.

3. Make a well in the middle and slowly add the water. Coat your hand with a little flour and mix until all has come together. Divide the dough into four equal-size balls.

4. Coat a rolling pin with a little flour to stop it sticking. No need to knead the dough, just roll it out using the rolling pin. Roll each ball out as thin as you can (no more than 5mm thick), to ensure a crispy thin base.

5. Sprinkle a little oil and flour on a baking tray to prevent sticking, then gently place your base on the tray and bake in the preheated oven for 8 minutes, without any topping, to ensure a crispy base.

6. Meanwhile, in a small pot, boil the sun-dried tomatoes for 5 minutes, until they become soft and easier to blend, then drain. Peel the garlic.

7. Put all the ingredients for the tomato sauce (including the sun-dried tomatoes) into a blender, and whiz until smooth.

TOPPINGS

"Here are three of our favourite topping suggestions (each recipe is enough for four pizzas)."

POTATO, RADICCHIO, CHEESE AND WALNUTS

  • 1kg waxy potatoes (such as Ditta or Maris Piper) 
  • 2 tablespoons oat milk
  • 3 tablespoons olive oil
  • ¾ teaspoon sea salt
  • 1 teaspoon ground ginger
  • 1 head of radicchio
  • 100g vegan cheese, or other cheese of choice
  • 25g walnuts

1. Boil the potatoes until soft, drain, then mash using a potato masher or large fork, adding the oat milk, olive oil, salt and ground ginger until the mash is thick but has a nice creamy taste.

2. Chop the radicchio in half, remove the firm core in the centre and bottom that is holding it together, and cut the rest into thin, small bite-size pieces. Grate the cheese. Lightly crush the walnuts.

3. Slather a generous serving of tomato sauce on your precooked pizza base, but aim for only a quarter of the sauce you’ve made – you don’t want to make the base soggy. Gently spread over the mashed potato to give a decent base layer. Next, sprinkle on about three-quarters of the radicchio, the lightly crushed walnuts and a good handful of cheese. 

4. Transfer to a warmed baking tray and bake in your hot oven for 8 minutes, until the base is nice and crispy and the topping is turning golden. Bake for longer if the base is still soft. Sprinkle with the rest of the radicchio to give it a nice pop of colour.

KALE, MUSHROOM, CHEESE AND ALMONDS

  • 100g kale
  • 2 tablespoons olive oil
  • a pinch of sea salt
  • 100g vegan cheese, or other cheese of choice
  • 100g oyster mushrooms, or other mushrooms of choice
  • 3 tablespoons tamari/soy sauce
  • 30g flaked almonds

1. Using your clean hands, remove the kale from its stalks and rip into bite-size pieces. Add the oil and salt and massage for a minute, allowing the salt to tenderize the kale.

2. Grate the cheese. Roughly chop the mushrooms and put them into a bowl. Add the tamari and mix well so that each piece of mushroom gets nicely coated. 

3. On your pre-cooked pizza base, spread a generous serving of tomato sauce (about a quarter of the quantity you’ve made). Cover with kale, a good sprinkling of cheese and some oyster mushrooms, and sprinkle some almonds on top. 

4. Lay the base on a heated baking tray and put into the hot oven for 4–6 minutes, until the cheese melts and the base starts to brown slightly. 

FIG, ASPARAGUS, CHEESE AND CASHEW NUTS

  • 4 fresh figs
  • 100g vegan cheese, or other cheese of choice
  • 200g fresh asparagus, or trimmed fine green beans
  • 1 tablespoon oil
  • a pinch of sea salt
  • 25g cashew nuts

1. Thinly slice the figs and grate the cheese. If using asparagus, remove the woody base of each spear. In a bowl, dress the asparagus spears with the oil and salt.

2. Spread about a quarter of the tomato sauce you’ve made on your pre-cooked pizza base, then sprinkle over the cheese and a layer of figs. Top with asparagus and a sprinkle of whole or chopped cashew nuts. 

3. Transfer to a warmed baking sheet and cook in the hot oven, until the cheese melts and the base starts to brown slightly and crisp.

If you can't drink Guinness, why not dive into it in cake-form?

This cake is made of Guinness and will be perfect as a Paddy's Day treat. 

Guinness pint cake

Ingredients

  • 250ml Guinness
  • 250g unsalted butter
  • 75g cocoa powder
  • 400g caster sugar
  • 150g sour cream
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 275g plain flour
  • 2½ tsp bicarbonate of soda
  • 150g cream cheese
  • 200g icing sugar
  • 100ml double cream, lightly whipped
  • 1 tsp vanilla extract

Method

Preheat an oven to 180°C.

Melt the butter and the Guinness in a pan over low heat. Add the sugar, vanilla extract and cocoa powder and mix well until smooth.

Whisk the eggs and sour cream together, add the Guinness mixture, then finally add the flour and baking powder and mix well. 

Divide between Guinness glasses so they are about ¾ full. Place on a tray and bake for 40 to 45 minutes until risen and cooked through. Allow to cool completely.

Place all the icing ingredients into a bowl and beat until smooth and fluffy. Level off the top of the cakes and spoon the frosting onto the top of each cake so they look like a proper pint. Enjoy!

So, instead of grilling the usual beef burgers and frankenfurters, here are a few ideas to make 2017's summer BBQ a little bit more memorable.

We weren't aware that deep fried tequila was a thing, but our lives have changed for the better since the discovery of this recipe.

It combines two of our favourite things: cake and booze… all wrapped up into one deep-fried cube of goodness. 

That is why we decided to share this life-changing recipe with you all.

Enjoy…

What you'll need:

Sponge cake

Tequila

Oil for frying

Powdered Sugar

Lime zest

What you'll do:

Just cube up the cake into small squares (shot size)

Dip it quickly into the tequila (important: the more you dip..the stronger they will be)

Place them into a 350 degree pot of 2 inches of oil.

Fry them until they’re golden on all sides. 

Let them cool, and sprinkle lime zest and powdered sugar on them.

January is considered a cold, and depressing month… you're broke, you miss Christmas and the weather is crap. 

Well ladies, your January is about to get a whole lot better, thanks to the gorgeous Limerick based foodies of Pandora Bell

The ladies behind this glorious website have given us the most delicious recipe for chili hot chocolate… and it has TEQUILA in it. 

Check it out, you will not regret it…

What you'll need:

100g of good quality dark chocolate.

1 tablespoon brown sugar.

A pinch of sea salt.

750ml of whole milk.

6 cinnamon sticks.

2 red chillies, halved and deseeded.

4 shots of tequila (one per portion).

Chile powder, cocoa nib, and/or dark chocolate shavings for garnish.

What you'll do: 

In a medium saucepan, heat the milk, 2 cinnamon sticks, the chillies and the bittersweet chocolate. Heat slowly stirring constantly, until the chocolate is melted and mixture is hot.

Gently whisk to completely homogenise mixture and give texture to the milk.

Simmer over low heat, whisking occasionally, until fragrant, about 10 minutes.

Carefully drain and discard chile and cinnamon sticks

Return to pot and add the tequila. Heat through again.

Divide into four glasses.

Garnish with chile powder, cocoa nib (or chocolate shavings), and a cinnamon stick.

If the January blues are still getting you down, then fear not, because this red velvet hot chocolate will perk you right back up.

And what's more, it's super easy to whip up on a cold night. All you need to do now is grab your pjs, your fave movie, and your BFF. Sorted!

Ingredients:

  • 3 cups milk
  • 2 cups semi-sweet chocolate chips
  • 10-15 drops red food colouring
  • whipped cream
  • red velvet cupcakes

Method:

1. Pour the milk into a pan over a medium heat. Add in the chocolate and stir until all the chocolate is melted.

2. Then add red food colouring to the mix, pouring in a few drops at a time or until you reach your desired shade of red. 

3. Pour into two mugs, whip off the cupcake frosting and put on top of hot chocolate. Add the whipped cream and then crumble the cupcake on top.

Many were shocked and saddened when Cadbury's changed the chocolate in its creme egg.

Yep, the sweet company ditched the original chocolate for cheaper stuff, and fans were not happy. Cadbury's even suffered a €6 million sales slump because of it.

So, if you don't want to lose the deliciousness of what once was, here's a fab recipe you can make with Dairy Milk chocolate, and guess what? It tastes exactly like the chocolate your mammy used to buy you. 

Remember to get some egg-shaped moulds to make the sweets! 

Ingredients

  • 1/2 cup light corn syrup
  • 1/4 cup butter
  • 3 cups powered sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • Yellow food colouring
  • 450g Dairy Milk chocolate, melted

Method

1. Prepare the eggshells by pouring the melted chocolate into the moulds. Tilt the mould to reach the whole surface and remember to keep space for the filing. Chill for 5 to 10 minutes, or until set.

2. In a mixer, cream together the corn syrup, butter, powered sugar and vanilla. Add milk and continue to mix. Take a third of the mixture and add the yellow food colouring for the yolk filling.

3. Transfer the white filling and yellow filling into two separate plastic bags, and cut a small hole in one corner of each bag.

4. Pipe the white filling first, then a small amount of the yellow filling into the chocolate egg. Chill for ten minutes to harden.

5. Use a thin layer of melted chocolate to stick the moulds together, and chill for another 5 minutes.

6. AND NOW EAT!

Sitting beside the fire, watching your favourite movie and cuddling up with your cocoa; there really is nothing better.

Well, no, that's a lie because NAUGHTY hot chocolate is better!

Now, what really doesn't get much better is sipping on warm hot chocolate with a little bourbon, vodka or rum (whatever you fancy… or whatever you can find) and totally relaxing for the night.

Pizza is a great thing! People love pizza so much they created perfectly pizza slice shaped pockets to carry it around with them wherever they go.

Cold pizza might not be the thing that dreams are made of, but you can't deny this is a sign that our collective obsession with the food is here to stay. 

Unfortunately too much of it can be a not so great thing, as much as we try to convince ourselves otherwise.

We often hear people saying that they’re trying to cut out the amount of carbs they consume. What they should be more concerned about is eating the right type of carbohydrates.

So, if you are trying to leave the stodgy carbs behind but have suddenly become consumed by cravings do not fear. 

We found the exact recipe you need.

This pizza has a quinoa crust that is high in protein and fibre, and is also naturally gluten free. So next time you start lusting after some takeaway pizza, you will know what to do. 

Ingredients

3/4 cup uncooked quinoa
1/4 cup water, plus more for soaking quinoa
1 tsp. baking powder
1/4 tsp. salt
Cooking spray

Method

Place the quinoa in a small bowl and cover it with water. Let the quinoa soak overnight or for at least 8 hours. Drain and thoroughly rinse the quinoa (this will prevent any bitterness in the crust). Place the quinoa, 1/4 cup water, baking powder, and salt in the bowl of a food processor. Process until a smooth batter is formed, about 2 minutes, scraping down the sides of the food processor as necessary. 

Line an 8 or 9-inch round cake pan with parchment paper and then spray the parchment paper with cooking spray. Pour the batter into the pan and smooth.

Bake the crust for 15 minutes at 220 degrees. Remove the parchment paper from under the crust.Flip the crust over and return to the oven for 5-10 more minutes, or until golden and the edges are crispy.

Remove from the oven and add sauce, cheese, and toppings of your choice. Return to the oven and bake for another 10 minutes,so the cheese is melted and delicious

Cut the pizza into four wedges (or just one giant slice) and enjoy!

Don't even get us started on the cheesecakes. Naturally when we found this beauty of a recipe online we had to share it with everyone. 

Just look this! 

This cookie is the size of a steering wheel for goodness sake, and we love. We love it so much that we think everyone should try it and allow the deliciousness and sugar content to brighten up this chilly winter weekend. Also, it is very easy to make, so there's really no excuse.

Ingredients

Soft carmel pieces (to be melted because nom)

Cookie dough x2

Chocolate chips (or M&Ms if you're feeling very fancy)

One giant dish to cook it in, the bigger the better. 

Instructions

1. Melt the caramel pieces using the microwave (about 30-40 seconds) then stir until smooth.

2. Slice one roll of cookie dough into smaller pieces and line the dish with them. Spread them out until it's covered.

3. Pour the caramel over the first layer and then add some chocolate chips.

4. Slice the second roll of cookie dough and cover the fillings. 

5. Place in the oven and bake at 180 degrees for 30 minutes or until golden brown.
