One of the hardest parts about kicking off a plant-based or vegan diet is finding ways to enjoy the meals you're used to without scrimping on taste.

Foodie and blogger Amy Mulvaney is going vegan for the month of February, and she'll be sharing a whole host of simple, budget-friendly and – above all – tasty recipes with us throughout her journey.

This week it's on to a seriously tasty snack.

"If you find yourself reaching for the biscuit press come 3pm, try these non-guilty vegan peanut butter bars," says Amy. 

"There’s no baking involved, and you could even have them for breakfast on the go. Store them in an airtight container to keep them fresh all week, although they won’t last that long…."

Quick and Easy No-Bake Peanut Butter Bars

Ingredients

  • 1 cup peanut butter
  • 1 cup agave
  • 2 tbsp melted coconut oil
  • Pinch of salt
  • 3 cups rolled oats
  • ½ cup raisins (optional)
  • 70% dark chocolate for drizzling (optional – not vegan)

 

Method

  1. Line a 10”x10” baking tin with non-stick paper.
  2. Warm the peanut butter in a pan over a low heat until smooth and easily spreadable.
  3. Add agave, coconut oil and salt and mix together.
  4. Add the rolled oats and raisins, if using.
  5. Stir everything together, making sure it’s well mixed.
  6. Pour into baking tin and press firmly down to make sure the mixture is compact.
  7. Melt dark chocolate (if using) over a bowl of boiling water.
  8. Drizzle melted dark chocolate on top.
  9. Pop into the freezer for 30 minutes.
  10. Cut into squares and enjoy!

There are plenty of red-haired folk in this part of the world.

And while the old cliché claims sporting a mop of ginger tresses results in playground taunts, in our experience those red-headed lads and lassies among us are rarely anything but massive rides.

Emma Stone, Lily Cole, Prince Harry, Ed Sheeran, Lindsay Lohan, Nicole Kidman and Damian Lewis are all au naturale but just about everyone from Cheryl Fernandez Versini to Demi Lovato and Ariana Grande have dyed their hair red at some stage.

Who can blame them? Here, SHEmazing rounds up the nine reasons why having red hair is pretty incredible:

 

1) You stand out from the crowd: Even in Ireland, your chances of being ginger are fairly slim. In fact, just 10 percent of us have ruby-hued hair. And globally that figure stands at 2 percent. #exclusive

2) It’s difficult to fake it: Red hair dye is notoriously difficult to get right for blondes and brunettes – and a fresh application fades rapidly. Meaning there’s nothing like the real thing.

3) Keep the compliments coming: Everyone wants red hair at some stage – cue a steady stream of “I’d LOVE to have your hair colour.”

4) What greys? While some other folk are already going grey in their 20s, red hair has a reputation for holding its own, gently lightening as you age, rather than turning grey.

5) You’re practically famous: There was a Ginger Spice – but no Blonde or Brunette Spice. Nuff said.

6) You’re quite possibly healthier: University Of Edinburgh researchers found that red heads boast a secret genetic weapon allowing them to to fight off certain illnesses more efficiently than blondes or brunettes.

7) Fight or flight: Red-heads make adrenalin faster than those with other hair colours.

8) You're a work of art: Botticelli's the Birth Of Venus depicts a gorgeous flame-haired lady upon a clam. And she's just one of a disproportionate number of red-headed lasses used by history's most famous artists. 

9) Overall, it’s just a really great colour: Blood, fire, passion, power – all red. In contrast, what’s brown associated with? Exactly.

McDonald's has been changing a lot recently, with many new (and whacky) menu items being tried and tested.

But it's latest innovation is something people are either going to LOVE or hate – and we're totally undecided.

According to Business First, the fast food chain is trying out a chicken and waffle sandwich. It's called the Chicken McGriddle and comes with a crispy fried chicken burger sandwiched between two maple-infused pancakes.

But if you're loving this idea, don't get too excited. For the moment the fast food chain is only testing it out in 11 locations in America. 

If the new sambo is a success there, it's going to be tested further (yawn) and then it might make the menu.

So, will this be something you'd like to see on the menu? We might even test this one out at home!

Ellen's hidden camera pranks are legendary at this stage, but we reckon this is the best one we've seen in a long time.

The chat show host teamed up with Adele this week to totally take the mickey out of US juice and smoothie chain Jamba Juice. With Ellen in her ear telling ehr exactly what to say, we have NO idea how she managed to keep a straight face for this.

"We have something similar in Britain; we call it Swishy Chug," Adele exclaims at one point, going on to explain how in England their juices are made from "beets and potatoes."

She then snips off around  €30 worth of wheatgrass and shoves it in her mouth, before trying to convince the staff to add a shot of whiskey to her juice while her assistant brushes her hair.

Amazing. If your Thursday's looking dull, this will cheer you up in a snap.

Even though it's bad for the company, we do love when a big brand make a big photoshop fail.

And the latest to enter the hall of fame? Snickers. 

The ad features a woman in a swimsuit, with a blue sky and calm beach surrounding her. But when you look again, there's not only a mysterious hand on the woman's shoulder, there's also a bag strap in her hand and her belly button is beside her boobs. 

But before you get annoyed at how bad it is – Snickers did this on purpose. The line on the ad reads, "Photo retouchers get confused when they're hungry."

According to AdWeek, there's a total of 11 photoshop fails in the campaign. Can you spot them all? Tweet Snickers when you do.

After Kanye's manic tweets about how he's in debt and he needs more money to share his creative genius with the world, one pizza chain want to bring him back down to earth.

Many fans were annoyed by his rambling since he's living in a multi-million dollar mansion, but Pizza Hut completely hit the nail on the head and offered Kanye a job:

Obviously Kanye didn't stop, so Pizza Hut didn't stop either. They proceeded to post a picture of his 'CV' on Twitter, and we're totally loving it – especially with Taylor Swift's name crossed off the list:

Oh, but it didn't stop there. One fan asked Pizza Hut how they received Kanye's CV in the first place, to which the chain replied: 

Well done Pizza Hut, well done.

After the trauma of her daughter's killing – not to mention a high-profile murder trial that gripped the world – June Steenkamp travels to Ireland this weekend.

Appearing on the Ray D’Arcy Show on RTE, she will discuss Reeva's death at the hands of her boyfriend, Olympic athlete Oscar Pistorius, on Valentine’s Day 2013.

June is expected to talk about how the past three years have affected her family, as well as her memories of her daughter, how it felt to see Oscar Pistorius in court, and the tragic events surrounding Reeva’s death.

Also on the show this weekend is Hollywood actor Aidan Quinn, who is in town to help mark the 20th anniversary of the hit movie Michael Collins.

He will join Ray on the couch to talk about his life and career to date, including his role in Elementary, his almost 30 year marriage to actress Elizabeth Bracco and his Irish roots – his parents are from Birr, Co. Offaly.

The Ray D’Arcy Show airs on Saturday February 20 at 9.55pm on RTÉ One.

The Love What Matters Facebook page always manages to give us a smile (or a tear) with its wonderful array of personal stories about love and family, sent in by people from all over the world.

One post in particular, which went up last night, has already racked up close to a million likes, despite being one of the simplest stories ever shared on the page.

The picture, taken in a shopping mall, shows an elderly couple leaning over a make-up display.

"This husband was helping his wife choose a make-up that matched her skin tone," the photographer explains. 

"She was so concerned about finding the right one and he was so unbelievably helpful. She was having a 'girl' moment, in a panic struggling to find the right one.

"He calmed her down, helped her find her colour and kissed her on the forehead.

"It was such a simple way to show how big his love was for her. A perfect reminder that our bodies grow old but our love doesn't have to."

While 11-year-old's are not typically the norm on the catwalks at fashion week (thank goodness), one very young model really did steal the show at Naeem Khan's runway show in New York this week.

Trinity Faith Moran took to the stage in a custom-made red, princess dress and though she stood a full foot smaller than everyone else on the stage, her beaming presence was enough to get her noticed. 

Thanks to the Make-a-Wish Foundation and Glam4Good, Trinity, who suffers from a rare form of cancer, became a bona-fide supermodel for a few hours. 

"A lot of people told me that I'm really pretty and that I should be a model sometime, so I decided to make it my wish," said Trinity to Teen Vogue. 

The two charities put the young girl in touch with top fashion stylist, Mary Alice Stephenson, who in turn got in touch with her good friend and fashion designer Naeem Khan. 

"We are in the throngs of making all these dresses, so when she came in, we decided it was perfect," said Naeem. 

"[The dress] has to be part of the collection, it has to be the same fabrics that we are using in the collection, so we just made it happen."

And did Trinity like her top designer gown? 

"I love it a lot, it's really pretty," she said. "I love the jewels that are on it."

Yas, jewels! Now there's a woman after our own heart.

Any famous figure can expect a bit of hate on social media. Many celebs ignore it and move on, but JK Rowling had something else up her sleeve.

An author named Kevin Williamson told another Twitter user not to apologise to JK in an angry tweet. But Ms Rowling fired back with a quote from the rapper Chamillionaire (remember him?), and it's actually rather brilliant.

Kevin's tweet said, "Why apologise to her. She uses her obscene wealth & lawyer droids to threaten & bully. Tell the radge to bolt."

To which JK replied, "They see me Rowlin' They hatin'."

We think the short and snappy comeback is brilliant, and so do many others as the tweet has been retweeted nearly 19,000 times.

And Chamillionaire even got back to the HP author, saying, "I was gonna remix your tweet to "We see them trollin" but you already took home the Grammy. Touche'."

Brian Rogers took to his own Facebook page at the beginning of the week to share a video of him doing impersonations.

A few impressions with the Election Candadates and Pascal

But there were no movie stars or musicians in these impressions. No, Brian decided to do a whole load of Irish election candidates.

He impersonated RTE's Paschal Sheehy, Gerry Adams, Joan Burton and Enda Kenny without any hesitation. 

The party leaders debate was held on Monday in Limerick and Brian decided to do the video of what he imagined the outcome to be.

Fair play Brain, fair play.

We don't know how Saoirse Ronan does it. 

The Irish actress has been out on the most chaotic press tour ever for Brooklyn (seriously she's been everywhere), is nominated for an Oscar and has another two movies coming out in 2016. 

And yet, the Carlow native still has time to plot her next film role.

Saoirse has just revealed that she will be starring in another adaptation of an Ian McEwan novel, her first being 2007's uber-successful Atonement. 

At just 13, Saoirse was Oscar-nominated for her turn in the film and the project single handedly propelled her career into the stratosphere. 

The 21-year-old will star in an adaptation of McEwan's 2007 Booker Prize nominated novella, On Chesil Beach. 

The moving story documents the honeymoon of a young couple who struggle to come to terms with their varying backgrounds, fears and issues with intimacy. 

"It's an extremely exciting prospect to be reunited with Saoirse Ronan on such a beautiful and heartbreaking project," said producers Elizabeth Karlsen and Stephen Woolley, who worked with the actress on the 2012 Neil Jordan film, Byzantium. 

The film is set to be helmed by theatre director Dominic Cooke and to begin filming later this Spring.
