Not that we need a special occasion to treat ourselves with cheese, but when we hear that today is Cheese Fondue Day, it would be rude not to take part in the festivities, amarite? 

Originating from Switzerland, fondue is a dish of melted cheese (fondu literally means melted in French) served in a heavy saucepan. The pot is placed over a spirit lamp or a candle in the centre of the table and everyone is free to dip small pieces of bread into the cheese using long-stemmed forks.

According to the tradition, if anyone drops their piece of bread in the cheese, they need to pay a forfeit chosen by the other guests.

If you don't have anything planned for dinner tonight, we highly suggest the following recipe. 

Easy cheese fondue

Ingredients

  • 1 garlic clove, grated
  • 250ml dry white wine, such as Pinot Grigio or Sauvignon Blanc
  • 200g Emmental cheese, grated 
  • 200g Gruyère cheese, grated
  • 50g Mature Cheddar cheese, grated
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • Fresh baguette, cubed, to dip 

Method

Toss all the grated cheeses with cornstarch.

Place the wine and garlic into a heavy bottomed saucepan over a low heat and bring to simmer. Gradually add the cheese, whisking continuously as you go.

Once all the cheese is melted and that the mixture is smooth, add lemon juice, season with salt (you probably will hardly need any), pepper and stir.

Serve immediately!

Belfast City Council have made the decision to decriminalise the use of abortion pills.

The motion comes just ahead of a trial, where a woman is being prosecuted for purchasing abortion pills for her teenage daughter. 

"The Council believes that abortion should be regulated like any other medical care and not by criminal law, while still enabling incidents of malpractice to be addressed, as with any other health service, through the general criminal law or medical disciplinary procedures," the motion read. 

“A woman who has an abortion is not a criminal, nor are healthcare professionals who care for them, and the law should not treat them as such.”

This move toward decriminilising abortion pills was put forward by Councillor Kate Nicholl of Alliance Party and backed by Councillor Mary Ellen Campbell of Sinn Féin.

Ms Campbell said that “it is wrong to criminalise women who choose to have an abortion… and also wrong to criminalise those healthcare professionals who have a duty of care to vulnerable patients”.

It passed with 34 votes for, 16 against and 5 non-votes.

Fulfil’s new flavour, Chocolate Hazelnut Whip, was unveiled earlier this week in the #BankofFulfil, a pop-up bank vault on Merrion Row in Dublin that’s open to the public.

Guests at the launch included Fulfil’s brand ambassadors David Gillick, Andy Maher and Mary Kate Slattery, along with top Irish bloggers, Kate Kelly and Nirina Plunkett, and stylist Jo Linehan.

A new proposal put forward by the Irish Pharmacy Union (IPU) has called for a number of hormonal contraception methods to be made available for free and without prescription. 

The Irish Times reports that, should the new measures come into effect, the pill, the patch, and the ring, would be freely available for all women over the age of 17. 

The proposed scheme would see pharmacists undergo additional training in line with international guidelines on the provision of contraceptives.

In order to avail of the scheme, women would not be required to have previously been prescribed a hormonal contraceptive.  

A spokesperson for the IPU said: “Given the professional input and the time involved in providing the service, consultation fees in line with those already paid for the EHC consultation to GMS patients (currently €11.50 plus ingredient cost and standard dispensing fee) would be appropriate.”

Similar to the push back on the provision of the morning after pill in 2011, it's likely that GPs would strongly oppose such a change.  

“There are no clinical reasons why oral contraceptives should still require a prescription. The oral contraceptive is one of the safest and most well-studied medicines available,” according to its proposal.

The Handmaid's Tale is by no means an easy watch – we would never want to even visit the totalitarian society of Gilead – but it is utterly engrossing.

While the TV adaptation of Margaret Atwood's classic novel proves as dystopian as its source material, it still feels awfully relevant to our time. As well, we can't help but be captivated by the grim yet gripping story.

We've been looking forward to the second series ever since we finished the first, and now we have all the info on where you can watch season two when it premieres.

RTÉ2 is set to be the first broadcaster to show The Handmaid's Tale series two in Europe, on Thursday 26 April at 10.35pm, the day after it premieres in the US.

As well, there will be live streaming and on-demand availability through RTÉ Player.

We are so looking forward to Elisabeth Moss' compelling performance, as well as those of her co-stars Joseph Fiennes, Yvonne Strahovski, Alexis Bledel, Madeline Brewer, Ann Dowd, O.T. Fagbenle, Max Minghella, and Samira Wiley.

Festival-goers, listen up! 

Indiependence has just added a whole of amazing artists to its line-up including Kate Nash, Hudson Taylor and Wyvern Lingo, to name just a few. 

They'll join headliners Primal Scream, Walking on Cars, Jake Bugg, Cast, Sigala and Le Galaxie at Deer Farm in Mitchelstown, Co. Cork this August Bank Holiday weekend. 

Now, I don't know about you, but that line-up has my 14-year-old indie-kid heart racing at 90mph. 

The three-day festival has also announced the introduction of the new Urban Village stage which will feature some of the best up-and-coming Irish hip hop and urban artists.

In keeping with the festival's tradition of promoting home-grown music, Delorentos, King Kong Company, The Blizzards, And So I Watch You From Afar and Hamsandwich are all set to preform over the weekend. 

Tickets are available via the Indiependence website and there are a limited amount of INDIE VIP Garden tickets still available.

6-year-old Lucy from Co. Wicklow was sadly diagnosed with an inoperable brain tumour earlier this month. 

To show support for both Lucy and her family, Grainne Flavin set up Lucy Lou's Dreams, a GoFundMe page with a target of €10,000.

Money donated will go towards helping the young girl complete her bucket list.

So far an incredible €23,000 has been raised – far surpassing the original target. 

Nicola Hatton McGill shared the GoFundMe link on the Greystones Open Forum, writing:  

"It is with a heavy heart that I post this message asking for support for this beautiful little girl. Lucy is a 6 year old child from Greystones who has been diagnosed with an inoperable brain tumour. Her parents, family and friends are devastated by this diagnosis and need support. Lucy has a bucket list and we are asking the community to help her get through as much as possible of it. Please donate to her Gofundme campaign, any amount is greatly appreciated. Let's pull together and show Lucy and her family we are behind them."

Grateful for the donations and words of comfort, Lucy's parents, Catherine and Marc, said they are overwhelmed by the generosity of people.

"We want to thank each and every one of you for your generous donations. The support is overwhelming and is helping us through this nightmare.

"Even more so, we want to thank you from the bottom of our hearts for thinking and praying for Lucy….all we really want is positive vibes, thoughts and prayers for our beautiful fun loving full of life princess Lucy."

Disney fans were left baffled yesterday after a bleak tweet from the company's official Twitter page went viral. 

The post in question, which was posted on Sunday, featured a GIF of the classic character Pinocchio, along with the caption: "When someone compliments you, but you're dead inside." 

Needless to say, this type of dark humour isn't exactly in keeping with joyful and happy vibes that Disney are so famous for, leaving followers to question whether the tweet was meant to be posted or not. 

It amassed just under 30,000 retweets and countless comments before it was pulled, with many followers demanding an explanation for the sinister caption. 

One theory behind the off-brand tweet is that the company was attempting to reach millennials with a 'sharable' and 'relatable' meme, but the execution didn't exactly go to plan.

Of course, not everyone was offended, and some people actually praised Disney for stepping away from its sugar-coated online persona. 

Like it or not, the post was not intended to offend anyone, and once you take Disney out of the equation, it's actually pretty funny.

Tammy Duckworth just made history, announcing yesterday that she welcomed a baby girl and simultaneously becoming the first US senator to give birth while still in office.

The Democrat named her second daughter Maile Pearl Bowlsbey, with her middle name being a tribute to her husband Bryan Bowlsbey's great aunt Pearl.

"Pearl Bowlsbey Johnson was Bryan’s great Aunt, an Army Officer and a nurse who served during the Second World War," the mum-of-two shared on Facebook.

"He spent many summer months with her while growing up, we feel her presence still and are grateful for her service to our nation during the most challenging of times."

Tammy herself is an Iraq War veteran. As well, the 50-year-old is the first disabled woman elected to Congress, as she lost both of her legs while serving as a US Army helicopter pilot.

Not only that, but the politician is also the first member of Congress born in Thailand, with her father being a US war veteran and her mother being of Chinese descent.

Regarding the newest addition to her family, Tammy said that she, Bryan, and their eldest daughter Abigal 'couldn’t be happier' to welcome little Maile.

The mum also noted that 'we’re deeply honoured that our good friend Senator Akaka was able to bless her name for us—his help in naming both of our daughters means he will always be with us'.

Senator Daniel Akaka, the first native Hawaiian to represent his state in the Senate, sadly died on Friday, April 6.

Tammy shared more gracious words on Facebook, writing: "We’re also so grateful for the love and support of our friends and family, as well as our wonderful medical teams for everything they’ve done to help us in our decades-long journey to complete our family."

Congratulations to Tammy and Bryan on their growing family! What a wonderful way to make history.

Chloe Moretz and Brooklyn Beckham have never strayed far form the headlines. Their on-again off-again relationship has been the subject of constant speculation, but after Brooklyn was recently snapped getting up close and personal with model Lexi Wood, it looks like things could all be over for the celebrity couple. 

The pair are yet to officially announce the split, but judging by Chloe's latest social media updates, things did not end on a good note. 

The 21-year-old actress took to Instagram to share a (now deleted) screenshot, revealing she was listening to Cardi B's new break-up anthem Be Careful. 

For those of you not familiar with the modern masterpiece, the track tells the story of a woman who suspects her boyfriend is cheating on her, leading fans to believe that Brooklyn had been unfaithful. 

Of course, this is just speculation and no one actually knows whether the cosy snaps were taken before or after the split. But one thing's for sure – he didn't waste any time moving on.
