Never mind a good ol' lazy Sunday. Bank Holidays are the perfect excuse to treat yourself to an utterly delicious and oh so indulgent brunch, complete with plenty of carbs and maybe even a mimosa or two.

Instead of dashing out to your favourite little cafe why not save some money and make this easy French toast recipe at home instead?

One of our absolute favourite breakfast dishes, this recipe is a sure crowd-pleaser. Not forgetting how adaptable it is depending on what toppings you choose.

In the mood for savoury? Top your toasts with streaky bacon. Got a sweet tooth? Douse your brekkie in maple syrup and serve with plenty of mixed berries and whipped cream. 

Although, for maximum enjoyment we recommend all the toppings, all the time.

Ingredients:

2 eggs

4 tbsp milk

1 tbsp caster sugar

A drop of vanilla extract

4 slices of thick brioche

Butter, for frying

Method:

Combine the eggs, milk, sugar and vanilla extract until the sugar has melted.

Dunk the bread in the egg mixture, ensuring it is thoroughly coated.

Fry slices of the bread in the butter until golden brown on both sides.

Serve with your choice of toppings.

Starting with the age-old question – fridge, or cupboard?

Contrary to popular belief, storing chocolate in the fridge can wreak havoc on the taste and texture of your chocolate. Not only can the chocolate absorb the smells of food around it (garlic chocolate, no thanks!) but storing in the fridge can also increase humidity.

Too Good To Go recommends keeping your Easter stash in a cool, dark place such as a kitchen cupboard and preferably in an airtight container to keep any unwanted flavours at bay.

Choose your chocolate wisely

Choosing choccies that have a higher cocoa content means that they can be kept for months (even years!) if stored correctly. Dark chocolate typically has a 24-month shelf life, whereas milk chocolate has an 18-month shelf life and white chocolate has around 12 months.

Paris may be known as the City of Lights, but we think that City of Style is far more fitting. As the birthplace of Haute culture, this French city is home to some of the globe’s most famous designers.

Admired for names like Christian Dior, Coco Chanel and Yves Saint Laurent, Paris is always catching the eye of keen fashionistas. You only must take a walk down a Parisian street to see effortless chic and turn a corner to spot a famous fashion-inspired landmark.

Hosting one of the largest fashion weeks every year, Paris is admired by the rest of the world. As we say goodbye to 2023’s fashion week installment, let’s have a closer look at why this designer city still continues to inspire the globe’s year-round style trends.

The History

Paris has a historical past with fashion. Home to the first bikini invented in 1946 and the iconic Little Black Dress (LBD) released by Coco Chanel in 1920, many of us recognise Paris as the birthplace of some of the world’s greatest style trends.

Although, it’s outside of the city, in a place called Versailles when the French fashion journey first began. Louis XIV’s reign in 1643-1715 was dominated heavily by the arts, bringing ‘high fashion’ into the spotlight.

Believing the ideology that great fashion meant great power, “Louis XIV wanted to make sure that his appearance and the appearance of his courtiers were in accordance with his idea of being a modern, powerful, civilised monarch – no longer just a warrior king from the Middle Ages, but a real kind of ‘Sun King’ with all kinds of mythological connotations. And obviously fashion and ceremonial dress were a big part of that.” says designer Kenzo Takada.

While the first French Empire eventually fell, their superiority surrounding fashion only grew. Making room for key icons like Marie Antoinette to shine, French fashion grew to revolve around this idea of la Parisienne, otherwise known as the ‘ideal Parisian woman’, dressed head to toe in stylish chic.

This brings us to today. French fashion still revolved around ‘Haute Couture’ and the idea of dressing powerfully, still rendering the country and indeed the city of Paris a force to be reckoned with.

From YSL’s take on 80’s glamour to Dior’s blast to the past in their 50’s inspired couture, 2023’s Paris Fashion Week was another one to remember.

As one of the ‘Big 4’, Paris competes against Milan, London and New York every year for the title of the most fashionable city. However, it’s Paris’ designers that give the city teh edge when it comes to global glamour.

Home to some of the best design houses the world has to offer, Paris is responsible for the likes of Chanel, Vuitton, Balenciaga and Céline, just a few of the luxury powerhouses we know and love.

That’s why Paris fashion Week makes such a statement. As we see our favourite design houses walk in their own city, the atmosphere feels euphoric. With a fashion-week buzz across the city months before it commences, it’s no surprise that Paris Fashion Week remains the finale of the ‘Big 4’ every year.

The people 

Finally, you can’t forget about the people. The French are the true reason Paris shines in all it’s fashionable glory.

Whether we imagine the classic striped top or a sun-soaked Parisian dressed in elegant black, one thing is for sure, you can bet that they look effortlessly stylish.

While we associate bold colours, geometric shaping and statement accessories with high fashion, the French have a different idea of signature style. Choosing classic pieces and neutral colours, Parisian people make a statement with how they style their clothes rather than the clothes themselves.

This idea of haute couture (high dressmaking, high fashion) was not only invested in Paris, but drives Parisian style to today. Used as a catchall term for high-end luxury clothing, you won’t travel far before you see a designer bag or branded shades in France.

Congrats on making it to the weekend! We have the bank holiday stretching out before us and all we want is to make the most of it – even if the weather is still quite cold with plenty of rain showers.

That's why this is the perfect time to make this super quick and tasty paella recipe! Transport yourself to the sunny depths of Spain with a little chorizo, spice and the dreamy smell of a sizzling paella!

You’ll need…

175g chorizo ​​ring

150g king prawns, cooked and peeled

1 onion

1 handful parsley

2 tomatoes

1 green pepper

1 zest and juice lemon

350ml chicken or vegetable stock

300g couscous (or cooked basmati rice)

Salt and pepper

1tbsp Olive oil

Place couscous in a large bowl and pour in stock. Cover with a plate to steam and set aside for 10 minutes.

In a pan over medium heat, pour and heat olive oil before adding chopped onions. Allow them to brown, before tossing is chopped chorizo.

Next, add chopped peppers into the pan and allow to soften, stirring continuously.

Add in prawns and chopped tomatoes and stir for 4-5 minutes.

Pour couscous into the pan, mixing well so it absorbs the flavours.

Grate lemon zest into pan before juicing half a lemon over the mixture.

Sprinkle salt and pepper and stir. Garnish with fresh shredded parsley and voila! The speediest paella ever produced!

You’ll also find the Great Sugar Loaf along the way, providing a great excuse to get out of the car and stretch your legs. Galway to Westport via Clifden

Head west on the Wild Atlantic Way and enjoy a road trip along the rugged west coast. Starting in Galway, you’ll make your way north-west winding through the stunning Twelve Bens to the picturesque town of Clifden where you’ll find plenty of great restaurants, pubs and shops. From Clifden head north to County Mayo to Doo Lough Valley which  has some breath-taking views along the route between Delphi and Louisburgh. Those interested in history should stop at the Doo Lough Famine Memorial. The Ring of Cork

If you want to unveil a hidden gem this Bank Holiday forget the Ring of Kerry, try out the Ring of Cork.

This drive takes you through the spectacular coastal views and stunning landscapes of County Cork. It travels along rural roads which connect at various stages to national routes and its advised to allow plenty of time to take in the scenery. The towns of Cobh, Midleton and Youghal are also located along the route and are the perfect for a stop along the way.

Experience all East Cork offers, as you travel through Killeagh and Castlemartyr, down to the delightful seaside towns of Shanagarry and Ballycottton. From there, you can follow the coastal roads along to Cobh, Crosshaven, Carrigaline and Cork Harbour. You will wow your guests when you make this divine Mango & Blueberry Easter Pavlova. Decorated with fresh fruit, this light and airy dessert will melt in your mouth. Perfectly paired with the crunch of mini-Easter eggs to add a festive twist. Dress with edible flowers for a touch of Spring.

Avoca’s Mango & Blueberry Easter Pavlova

Makes 1 large pavlova.

Ingredients

225 ml free range egg whites (Approx 6 large eggs)

330 grams caster sugar

1 tablespoon corn flour

1 ½ teaspoons white vinegar

2 teaspoon vanilla

Pinch of sea salt

1 punnet fresh blueberries

2 mangos, sliced

Decorative chocolate mini eggs

375 ml whipping cream

1 teaspoon vanilla

80 grams icing sugar

Method

Pre heat oven to 100C. Draw a circle or oval, on parchment paper, depending on what platter you will be serving the pavlova on. Flip the paper so the outline is underneath & place on a greased baking tray.

In a stand-up mixer add egg whites & a pinch of salt & whisk for 10-12 minutes on high speed until the whites start to form stiff peaks. Gradually add caster sugar 1 tablespoon at a time (this will take a further 12-15min) & the egg whites will become thick & glossy. This is a very important step, do not rush this process.

Next add the vinegar, corn starch & vanilla. Whisk for another minute to fully incorporate.

Spoon the meringue in the centre of your shape & build a pillowy soft nest making sure to fill out to the edge of your outline. Make sure to make indents into the meringue, this is where all the amazing fruit & cream can sit & look beautiful.

Bake in the oven for 2 hours, until the outside is nicely crisp & dry.

Turn off the oven & let sit inside for 3 hours to let cool naturally. Whip the cream with the icing sugar & vanilla until light & fluffy.

Have all your fruit, cream & Easter eggs ready to assemble.

Now the fun part…. Layer dollops of whipped cream, fruit & eggs all over the top of the meringue, making pretty patterns, as this will be your showstopping Easter centrepiece dessert.

We like to decorate the pavlova with fresh leaves & edible flowers to really brighten up the Easter theme.

Paul Cattermole, one of the stars of the pop group S Club 7, has died at the age of 46.

The tragic news comes just a few weeks after the band, who were formed in 1998, had announced a huge upcoming reunion tour.

Paul's death was confirmed in a statement by his family.

"It is with great sadness that we announce the unexpected passing of our beloved son and brother Paul Cattermole," they said.

"Paul was found yesterday, 6th April 2023 at his home in Dorset and was pronounced dead later that afternoon," they continued.

"Dorset Police has confirmed that there were no suspicious circumstances. Paul's family, friends and fellow members of S Club request privacy at this time," the statement concluded.

Following the heartbreaking announcement of Paul's passing, the remaining members of S Club 7 – Tina Barrett, Jon Lee, Bradley McIntosh, Jo O'Meara, Hannah Spearritt, and Rachel Stevens – shared a joint statement on social media, paying tribute to their friend.

"We are truly devastated by the passing of our brother Paul. There are no words to describe the deep sadness and loss we all feel. We were so lucky to have had him in our lives and are thankful for the amazing memories we have,” the band said.

"He will be so deeply missed by each and every one of us. We ask that you respect the privacy of his family and of the band at this time,” they added.

At this time, the cause of Paul's death is unknown.

Amy Hart is keeping it real!

The former Love Island star welcomed her first child, a baby boy named Stanley, into the world last month alongside her boyfriend Sam Rason.

The 30-year-old has always been known for being candid with her audience, and her postpartum life has been no exception. 

Taking to Instagram last night, Amy chose to share a video montage of herself conducting a try-on clothing haul. “First one back,” she penned, alongside an anxious-face emoji. 

“Clearly not as confident as I was but it’s a work in progress!” she continued.

Amy then chose to highlight something that many struggle with during their postpartum journey. “Sam will not be able to resist me in outfit 3,” she joked, after including a clip of herself wearing a playsuit and being unable to fasten it fully around her stomach.

“It’s all I ever wanted and more, he may only sleep on my chest some nights which means I can’t sleep, but his cute face means I can’t be annoyed,” Amy added teasingly.

CarePlus Pharmacy says the demand for seasonal allergy treatments, including antihistamines and nasal sprays, has begun as people suffer the effects of the rising pollen count. Many families will enjoy outdoor activities this Easter as the weather is expected to be dry across the country and allergy sufferers are already taking steps to fight against the effects of hayfever.

Every year an estimated one in ten people experience symptoms associated with hayfever and seasonal allergies in Ireland (source: Asthma Society of Ireland).

CarePlus Pharmacy is also advising people to be aware of the symptoms of hayfever which can often be mistaken for a common cold. People who frequently experience cold-like symptoms such as sneezing and a runny or stuffy nose at this time of the year could actually be suffering a seasonal allergy.

Tomás Conefrey of Conefrey’s CarePlus Pharmacy on Dublin’s Pearse Street says many allergy sufferers begin stocking up in early April as the temperatures start to get warmer. “Regular hayfever sufferers know that they will begin to experience the symptoms at this time of the year so they stock up in advance as prevention is always better than cure. A lot of people might think they get a cold at this time of the year due to the change in seasons but they could actually be suffering from hayfever. Many of the symptoms are similar but colds can be treated with rest, pain relievers and decongestants, whereas allergies are typically treated with antihistamines, eye drops and nasal sprays. If in doubt, consult your local CarePlus Pharmacy team for expert advice.”

Tomás is also advising everyone to check their medicine cabinet and ensure the products they have are in date. “People may have antihistamines left over from last year and will be inclined to use them when they spot the first signs of an allergy but I would advise everyone to check the date of the products in their medicine cabinet first. If you’re planning on using that antihistamine that’s been in the press since last year, check that it's still in date and hasn’t expired. Some antihistamines, particularly those for children, only have a shelf-life for a certain length of time.”

Community pharmacists like Tomás and his team are well-placed to advise their customers on how to cope with any problems posed by rising temperatures or allergies. Conditions like hayfever can be easily treated but it is important for people to be aware of the symptoms and know what they’re treating.

A man has been arrested on suspicion of murder following the fatal assault of a woman in Limerick. 

A woman, aged in her 20’s, was pronounced dead at the scene of a residential property on the Dock Road, Limerick City, at 1.30pm on Tuesday, April 4.

The fatal assault investigation was upgraded to a murder investigation on Wednesday, April 5 by a Senior Investigating Officer.

Detectives from the PSNI Serious Crime branch have arrested a 26-year-old man on suspicion of the woman’s murder.

Detectives based at the Garda incident room at Henry Street Garda Station remain in close contact with their colleagues in the Police Service of Northern Ireland at this time.

The Garda Technical Bureau is continuing with their examination of two scenes in Limerick.

A Family Liaison Officer has been appointed and will keep the family of the victim informed of the investigation.

Gardaí are continuing to appeal to anybody who has information that can assist them with this investigation.
