Potato Croquettes with Blue Cheese Dip, Cranberries and Walnuts

Serves: 4

Total time: 30 minutes

Ingredients:

  • 1 x bag Green Isle Potato Croquettes
  • 50g dried cranberries, roughly chopped
  • 50g walnuts, toasted
  • 1 tbsp. fresh chives, chopped
  • For the blue cheese dip:
  • 150g sour cream
  • 50g mayonnaise
  • 75g blue cheese, crumbled
  • ½ tbsp. white wine vinegar
  • 1 tsp. Worcestershire sauce
  • Salt and freshly cracked black pepper

Method:

Cook the Green Isle Croquettes according to the on-pack instructions and whilst they are cooking, make the blue cheese dip.

In a medium-sized bowl, mix the sour cream, mayonnaise, white wine vinegar, Worcestershire sauce, seasoning and most of the blue cheese (keep some for the garnish) together until smooth and set aside.

Place the walnuts into a dry pan and set over a medium heat to toast. Dry fry for 5 minutes, or until the nuts start to smell toasty and fragrant then remove from the heat and coarsely chop.

When the Croquettes are cooked, place them into a serving dish and drizzle the blue cheese dip over them. Crumble over the remaining blue cheese and lastly sprinkle the cranberries, toasted walnuts and chives over the croquettes dish.

Roast Potatoes with Caramelised Onions, Crispy Bacon and Sage

Serves: 4

Total time: 40 minutes

Ingredients:

  • 1 x bag Green Isle Roast Potatoes
  • 2 red onions, cut into wedges
  • 4 rashers smoked streaky bacon, chopped into bite sized pieces
  • Handful of sage leaves
  • Salt and freshly ground black pepper

Method:

Preheat the oven to 220°C / 200°C fan.

Place the Green Isle Roast Potatoes on a large baking tray and add red onion wedges.

Place the tray into the preheated oven for 15 minutes.

After 15 minutes turn the potatoes and onions and add the bacon bits.

Cook for a further 15 minutes, or until the potatoes and bacon are crisp and piping hot throughout.

Scatter the sage leaves over the tray and bake for a final 5 minutes.

Serve to the table in a large bowl with a little seasoning on top.

Christmas Buttered Garden Peas and Leeks

Ingredients:

  • 4 tbsp. butter
  • 2 leeks, white and pale green parts only, thinly sliced
  • Salt and freshly ground black pepper
  • 85ml white wine
  • 2 heads of Little Gem lettuce, shredded
  • 450g Green Isle Garden Peas
  • 100ml chicken or vegetable stock
  • 2 tbsp. finely chopped chives
  • 2 tbsp. finely chopped parsley
  • Zest of ½ a lemon
  • 50g toasted hazelnuts, roughly chopped

Method:

Melt butter in a large wide saucepan over medium-low heat. Add the leeks and cook stirring occasionally, for 5 minutes until tender.

Season well with salt and pepper then pour in the white wine. Cook until the wine has reduced by ½ and then add the lettuce, peas, and chicken stock.

Partially cover the pan and bring to a simmer. Cook at a gentle simmer until the lettuce and peas are tender, which should take about 5 minutes.

Remove from the heat, then stir in the herbs and lemon zest. Serve scattered with the toasted hazelnuts.

Kelsey Parker has confirmed her relationship status, over a year after the death of her husband.

The Wanted singer Tom Parker tragically passed away from a brain tumour in March of last year. He was just 33 years of age. 

Nine months after Tom’s death, Kelsey started dating again and began a relationship with electrician Sean Boggans. 

Now, as she continues life as a mum-of-two, Kelsey has opened up about her current dating status.

Yesterday, the 33-year-old took to her Instagram stories to ask her fans to send her questions for a Q&A. During the session, one of Kelsey’s 419K followers asked if she is still in a relationship.

“We’re not together anymore,” she confirmed in a written response, before going on to praise Sean.

“It’s a shame it didn’t work out as he’s a really amazing person, but it just wasn’t right,” Kelsey penned.

“Hopefully one day I will find love again,” she added.

Later in her Q&A, Kelsey was also asked how she has been coping with Tom’s absence during the festive season. The couple had been married for almost five years and had two children together – four-year-old Aurelia and three-year-old Bodhi.

“I think grieving at this time of year is the hardest,” she confessed, adding: “You’re doing it all without that person you love.”

“I don’t think grief ever goes away. I think you just literally learn to live with your grief,” she continued.

Back in September, Kelsey took to social media to defend her dating life, after trolls accused her of moving on too quickly after Tom’s passing.

'Tom will always be the love of my life and if I could choose I'd choose him and the life we were building together. But someone somewhere else had other plans and I just need to get through the long days,” she admitted at the time.

Jamie Lynn Spears has revealed the ‘regrets’ that she has after quitting I’m A Celebrity… Get Me Out Of Here!

The Zoey 101 actress famously exited the hit ITV show after lasting 10 days in the Australian camp. At the time, the I’m A Celebrity producers stated that Jamie Lynn had left the jungle on “medical grounds”.

Following her dramatic exit, viewers have now been given a glimpse into the star’s departure, and her thoughts on her experience.

In her post-exit interview on I’m A Celebrity… Coming Out, which aired last night, the 32-year-old recalled how her campmates in the jungle rallied around her.

"The first few days in camp were tough for me. The only way I felt I could cope was to cry. And out of nowhere surprisingly these wonderful humans scooped me up and brought out a side of me I didn't know I had. I let my guard down,” Jamie Lynn confessed.

The reality star then went on to explain why she chose to regularly speak about her older sister, pop sensation Britney Spears.

"My campmates were talking about their families, why was I not gonna talk about mine? I wasn't gonna be the one not sharing, that would be strange,” she noted.

When asked if she intends to keep in touch with her co-stars, Jamie Lynn responded: "I think I wanna move to the UK, I'd like them to adopt me. I have never laughed harder with a group of humans like that where your abs are hurting. I made life-long friends, I forgot I could do that. I forgot people could like me.”

Describing the show as “the hardest but most fulfilling thing”, Jamie Lynn concluded by admitting that she “really wanted to be there longer.” 

“I do regret that my journey didn't fully play out till the end. I can't say enough, I've made life-long friends. I hope they feel the same way,” she exclaimed.

Montana Brown had a frightening scare for her baby son’s health.

The former Love Island star gave birth to her son Jude during this summer, alongside her fiancé Mark O'Connor.

Now, six months on from welcoming her first child, Montana has detailed a terrifying incident that recently left her worried for his health.

Taking to her Instagram stories yesterday, the 28-year-old shared a snap of her baby boy being cradled by his aunt in hospital.

“Jude had his first fall. He was in a dockatot type thing and in 5 seconds managed to launch himself off the kitchen counter and landed on the hard tiles,” Montana admitted, adding that she has felt “literally the worst mum guilt of my life.”

The reality star then went on to confirm that she immediately raced her little one to hospital.

“Thank god for his auntie and uncle who came with me to get him checked out. He seems absolutely fine but just a big mark on the front of his head but feel better coming to A&E,” she explained.

The mum-of-one also noted how the worrying incident has affected her mentally.

“Did I cry my eyes out? Yes. Will I be scared to put him down without wrapping him in pillows… YES. He is definitely moving way more and so curious to try fling himself off everything even my arms he is launching his body backwards so that's fun,” she penned.

“But still feeling sick to my stomach that it happened [to be honest], turned around to get my porridge out of the microwave and as I turned back saw him launch himself backwards I feel so [upset], I know these things happen but his first proper cry went through me..” Montana concluded.

Montana and her partner Mark welcomed Jude into the world in June. At the time, the new mum chose to announce his birth with a black-and-white snap of the newborn.

“Welcome to the world Jude Isaiah O’Connor, we’re so smitten with you little man,” Montana wrote.

Callum Kerr is now a dad!

The former Hollyoaks star has announced the arrival of his first child, alongside his girlfriend Lauren Stacy.

Callum, who is best known for his role as George Kiss in the hit Channel 4 soap, is now a proud dad to a beautiful baby girl.

In the caption of his post, the actor went on to unveil the name that he and Lauren have chosen for their baby girl.

“Meet my daughter, my world: Isla,” he penned.

Callum and Lauren initially announced on July 4 that they were expecting their first child together. The news of the couple’s pregnancy came eight months after Callum’s split from his former fiancée.

Sam Thompson has broken his silence after his emotional return to the UK!

After spending a month in the Australian jungle, the new winner of I’m A Celebrity… Get Me Out Of Here! has been reunited with his loved ones.

After sharing a tearful reunion with his girlfriend, Strictly Come Dancing star Zara McDermott, Sam has now been reflecting on his welcome home.

Taking to Instagram last night, the 31-year-old shared several heartwarming snaps of himself and Zara reuniting, alongside Sam’s friend and podcast co-host Pete Wicks, who travelled home with him from Australia.

“She brought balloons,” Sam gushed in the caption of his post, adding: “Reunited with the love of my life.”

“What a trip, what a lucky guy I am,” the former Made In Chelsea star went on to write, before concluding jokingly: “Spot an awkward Pete”.

Following Sam’s heartfelt return home to Zara, many fans of the couple have since taken to his comments section to express their delight at the photos.

The Married At First Sight Australia stars were together for over a year, after initially finding love on the hit show.

Both Tahnee and Ollie took to their Instagram accounts to share their own statements on their split. 

“Sadly, Ollie and I have decided to part ways. Our lives are taking us in different directions and we feel at this stage it’s the best decision for us,” Tahnee penned, alongside a sweet image of the former couple.

“From meeting as strangers who got ‘married’, to genuinely finding love, I’m pretty proud of the time we’ve shared. Meanwhile, on his own account, Ollie confirmed that they are still good friends, as he shared heartwarming footage of the pair dancing together earlier this week.

“Hello, Tahnee and I have split up. It’s sad, but it’s okay. What a ride! A journey filled with love, laughter, challenges, and in the last month, reflection. I think we tried really hard to make it work,” the 26-year-old admitted, explaining that life after MAFS was “an adjustment that we struggled to make.”

“In a post like this, the words ‘friend’ and ‘breakup’ are usually synonymous but with little truth behind them. However, if friendship was the foundation of us before love, I like to think it might be something we can share in the aftermath,” Ollie concluded sweetly.

Following the stars’ announcement, many MAFS fans have been expressing their own upset.

“This has actually made me so sad what the hell,” one viewer confessed.
