When it comes to lunchtime during the week, we want something nice and filling, that's good for us, but also tasty and bursting with flavour – and we want it just handed to us.

Sometimes the effort of cooking a proper, healthy lunch during the week is just too daunting. We're in the middle of our work day, we're trying to grab something quick and often end up grabbing something that a) doesn't taste great and b) isn't very good for us, just because it's fast. But with this falafel bowl recipe, you can make most of it before hand (say meal prepping on a Sunday evening?) and add in the fresh ingredients when you have it for lunch during the week! Simple!

You'll need…

1 ripe avocado

40g fresh leaves coriander

3 garlic cloves

1 lemon

40g fresh Mint

40g fresh Parsley

200g red cabbage

1/4 red onion

1/4 cucumber

2 tomatoes

100g Hummus

350g cooked brown rice

3tbsp plain flour

Olive oil

1tsp ground cumin

100g yoghurt

50g feta

1 can chickpeas

Pour your can of chickpeas into a blender and follow with half your finely diced red onion and 2 chopped garlic cloves.

Season with fresh parsley leaves, fresh coriander leaves and ground cumin.

Next, add in your plain flour along with a dash of salt and pepper.

Pulse until blended.

Line a baking tray with baking paper and scoop the falafel mixture from the blender and form into small balls with your hands before placing on the tray.

Heat olive oil in a frying pan and cook your falafel balls in it until crispy and golden brown.

In a large bowl, place your cooked brown rice and squeeze the lemon juice over it. Dice two tomatoes and add them in, followed by the rest of your red onion and chopped garlic cloves.

Season with salt and pepper before adding in roughly chopped mint leaves. Mix together well.

Add in a handful of shredded red cabbage, chopped cucumber and a sliced avocado before adding in your falafel balls.

Garnish with a spoonful of hummus, yoghurt and some crumbled feta for the perfect falafel bowl.

CRNI (Community Resources Network Ireland), the representative body for community based reuse, repair and recycling organisations in Ireland, today awarded the ReMark Quality Mark to seven organisations across the country for their outstanding commitment to sustainability and circular practices.

The awards ceremony, hosted by sustainability advocate Fionnuala Jay at CRNI’s HQ in the Guinness Enterprise Centre, Dublin 8, saw the following organisations recognised for their successful participation in the ReMark pilot scheme over the past 12 months:

Simon Charity Shops – operated by the Dublin Simon Community, the Simon Charity Shops are stocked with high-quality goods, both new and reused, helping to fund the charity’s work supporting those who are homeless or at risk of homelessness in Dublin, Kildare, Wicklow, Meath, Louth, Cavan, and Monaghan. With a strong sustainability ethos, Simon continuously seeks to reduce waste through recycling and reuse channels and are proud to be active members of the circular economy.

ReCreate – a Dublin based award-winning social enterprise based around the concept of ‘creative reuse', which encourages the public to reuse materials that would normally be sent to landfill or recycling in all kinds of creative and inventive ways, giving them a new lease of life. In the ten years since its inception ReCreate has redirected over 1,000 tonnes of material from landfill.

Native Events – a Dublin based organisation specialising in providing sustainable solutions for festivals, events, and arts and culture organisations, dedicated to helping reduce environmental impact, promote circular economy principles, and create memorable experiences that prioritize sustainability, climate action, nature, and biodiversity.

An Mheitheal Rothar – a Galway based community bike workshop which sells recycled bikes, parts, and accessories, and provides paid repairs, training, and services. The organisation takes discarded or donated bikes and uses them to provide valuable training in cycle mechanics for trainees, while creating second hand bikes for sale to the public. It also holds regular DIY workshops where anyone can be supported to learn to fix their own bike.

IRD Duhallow Furniture Revamp – a Cork based furniture recycling and re-use initiative which was established to provide sheltered training and employment opportunities, help the environment by reducing landfill, and provide quality up-cycled furniture at low cost to low-income or marginalised families and individuals.

Deaf Enterprises – a Cork based profit for purpose social enterprise, that employs people primarily from the deaf and hard of hearing community, providing furniture upholstery, French polishing and bike repair services to consumers and businesses.

Hands That Talk – A deaf charity in Dungiven, Derry striving for social inclusion for the deaf, offering recreational and accredited courses including Sign Language.

ReMark is a reuse certification scheme involving accreditation of reuse organisations to an accepted operational and sustainability standard. The ReMark accreditation is specifically designed for charities, non-profits and social enterprises and is an initiative of CRNI (Community Resources Network Ireland), funded by the Department of the Environment, Climate & Communications through the Circular Economy Innovation Grant Scheme (CEIGS).

In order to achieve the ReMark Quality Mark, each organisation that applied for the pilot was initially assessed across a number of key areas including Social & Environmental, HR, Governance, Health & Safety, Circular Service Management, Data Protection, Customer Service & Communication, and Physical Premises, to identify areas for improvement.

The action plan for each differed according to the results of the initial assessment, and a timeline was agreed for each applicant to implement or improve their processes, with regular liaison and support from the ReMark Project Manager throughout. The accreditation process culminated in an audit carried out by independent auditors before a decision was made to award each organisation.

Congratulations, you’ve made it to Friday!

We have a lovely weekend ahead of us, and although many of us are still being faced with rain showers and thunderstorms, we’re taking this as the ideal opportunity to snuggle up on the sofa with a great film.

However, as there is so much choice out there nowadays, we often take ages to pick out the perfect movie to watch.

Luckily for us, RTÉ One has done the work for us, as they are showing the conclusion to one of the best rom-com film franchises this weekend!

This Sunday evening, the broadcaster will be airing the third and final Bridget Jones movie, titled Bridget Jones’ Baby.

The 2016 flick sees the return of Renee Zellweger as the hilarious Bridget Jones, who once again finds herself single after breaking off her relationship with the handsome Mark Darcy (Colin Firth).

Now in her 40s, Bridget is trying to tackle her looming love life and keep on top of her career. 

Our favourite English woman briefly regains a bit of her spark back when she has a one-night stand with American stranger Jack, as well as an unexpected hookup with ex-boyfriend Mark.

However, things soon turn complicated for Bridget when she discovers that she has fallen pregnant – and she has no idea if the baby’s father is Jack or Mark.

As Bridget faces the prospect of becoming a mum for the first time, she must also battle her feelings for both men and wonder how the next chapter of her life is going to unfold.

We can’t wait to watch this absolute masterpiece! Bridget Jones’ Baby will be airing on RTÉ One this Sunday evening, June 25, at 9:30pm. Get the snacks in, and enjoy!

Fans of The Great British Bake Off are convinced that they know who will be appearing in the next celebrity edition!

Hollywood couple Ryan Reynolds and Blake Lively have confirmed that they recently visited the iconic Bake Off tent. 

Filming for this year’s series is already underway, and is due to launch on Channel 4 in September.

However, it seems as though filming has hit fever pitch with The Proposal star Ryan choosing to visit the grounds of Welford Park in Berkshire, where the Bake Off set is located. To the delight of many, he also took his wife, Gossip Girl actress Blake with him.

Taking to social media earlier today, the 46-year-old delighted fans when he shared a snap of himself with judges Paul Hollywood and Prue Leith, with the white tent visible behind them.

“A full and unconditional hug of pure serotonin,” Ryan wrote in his caption.

Paul also chose to share the post to his own Instagram account, with the caption: “Prue and I catching up with @vancityreynolds … #legend.”

Following the reveal of Ryan’s set visit, the 57-year-old baker went on to share that Blake also made it to the Bake Off set.

“Sorry Prue, Blake (@blakelively) has taken your seat… welcome to cake corner Blake,” he joked, alongside a photo of himself and Blake sitting inside the tent.

Many Bake Off viewers have since taken the Hollywood couple’s visit as a sign that they might feature in the next series of Celebrity Bake Off.

“Please say they are doing a Bake Off special…. we need a couples special!!!!” one fan replied.

“I swear to god if you are on one of the special edition episodes I will lose my mind,” another exclaimed.

Blake and Ryan have spoken about their love of Bake Off in the past, with the Deadpool actor telling People in 2019: “It’s a nice thing to watch at night. Everybody on the show is nice to each other, which I find refreshing.”

Kevin Clifton has announced he is taking a career break as soon as his final work commitment finishes. 

The Strictly Come Dancing professional dancer welcomed the birth of his first child, a daughter named Minnie, with his girlfriend and fellow Strictly star Stacey Dooley in January of this year.

Now, while speaking about his career and family, Kevin has revealed he is taking a break from working as soon as his last show of the Strictly Ballroom The Musical tour is over.

Opening up to Digital Spy, Kevin explained, “I left Strictly Come Dancing and then COVID happened. Then since we came out of COVID I've sort of gone back-to-back with different shows non-stop”.

“It went Singin' in the Rain, Rock of Ages, The War of the Worlds, Burn the Floor, then I did The Games on ITV, Who Do You Think You Are? and then back to Singin' in the Rain on tour. Then I started rehearsals for Strictly Ballroom the day after I finished Singin' in the Rain”.

Revealing he’s been working back-to back-on Strictly shows for almost a year, Kevin admits he needs a break in order to focus on his family and to be there for Minnie as she grows up.

“By the time I finish in mid-July it will have been a 10-month tour of Strictly Ballroom. So, since we came out of COVID it's just been back-to-back non-stop”.

Clifton continued, “So, for the rest of this year I've decided I'm going to take a break from all performing work just to be a dad. I just don't want to miss any of Minnie”.

“So, yeah, my plan is to take a break as soon as this contract finishes”, he confirmed.

The 40-year-old recently opened up about wanting to have a ‘little gang’ of children to raise with Stacey.

“Stacey’s already talking about Minnie needing a brother or a sister. I can see us having more kids if we’re lucky enough and it happens for us, but Minnie is a handful as it is at the moment!”.

Kevin admitted,  “It’s the idea of them being a little gang and having each other’s backs”.

Now that the weather is finally a bit warmer, it’s time to make the most out of our delicious summer fruits which are in season right now.

That means making a whole lot of our favourite vanilla pavlova, and topping it with juicy mixed berries and fruit — yum!

This foolproof recipe is a summer staple in our house, as it’s incredibly easy to make with very little forward planning required, and it’s gluten-free which makes it perfect for sharing with friends and family.

Simply swap out whatever toppings you like, whether it be strawberries and raspberries or mango and peaches, and dig in!

Prep Time: 15 mins

Cook Time: 90 mins

Ingredients:

6 large eggs

275g caster sugar

Half tsp vanilla extract

1 tsp corn flour

Half tsp white vinegar

480ml cream

200g mixed fruits

Chocolate curls and icing sugar to decorate

Method:
Preheat the oven to 150°C / 300°F / Gs Mark 2. Grease a flat 36cm x 26cm / 14in x 10in baking tray lightly and cover with baking parchment.

Place the egg whites in a clean, dry mixing bowl with no trace of oil or grease.

Mix with an electric mixer on setting two for 2-3 minutes until the egg whites become firm and hold their shape. 

Add the sugar one dessert spoon at a time until the egg whites become glossy and velvety. The test is to turn the bowl upside down – when the mix is ready it is so stiff that it doesn't move. 

Add the vanilla extract, corn flour and vinegar and gently mix for 30 seconds on setting one. 

Using a spatula, spoon the mixture onto the baking tray forming a rectangular shape. If you want to go for a round shape, carefully pour out your mixture onto a large lined baking tray, moulding it into a round shape using a spatula as you pour.

Place in the preheated oven for about 70-80 minutes. Keep the oven door closed. 

As it bakes the colour will change from gleaming white to pale beige. Turn off the oven but leave the pavlova in the oven to cool.

When ready to dress it, gently slip it off the baking parchment onto a presentation dish. 

To dress with a casual look, whip the cream loosely and pile onto the pavlova, spreading it to the edge. Pile the fruit in the centre. 

If you like, you can sprinkle chocolate curls, all over the pavlova and dust with sieved icing sugar to finish.

Sanam Harrinanan has been opening up about her relationship with boyfriend Kai Fagan. 

Sanam and Kai first met while appearing in the winter series of Love Island and ended up being crowned winners of the show. 

Now, just three months after being crowned winners, Sanam has been discussing how the couple have been connecting outside of the villa and what their plans are for taking the next big step in their relationship- moving in together.

While speaking to MailOnline, Sanam explained, “We are a really good match because we connect on so many different levels”.

“Things are going really, really well with me and Kai. We have connected a lot more since the show because we're spending more time with each other's families. Although we don't live together it feels like we do”.

“We have done our own thing, explored new areas, gone on dates, it's going so well. I feel like I'm on cloud nine because I can't believe this is my life right now”.

Speaking about taking the next step of moving in together, the 25-year-old admitted, “We are waiting to move into together officially. It is something we definitely want to do but it's finding the right place and the right location”.

“It's still a bit fresh because we don't know where we're based, we are still settling into this new lifestyle”.

“We don't want to jump ahead… we want to enjoy our relationship while we don't have a camera watch us all the time but we're both in it for the long haul”, she added.

Revealing she didn’t think she’d find love when first going into the villa, Harrinanan explained, “It shocked me because going on the show I didn't think that I would connect with someone on such a personal level”.

“I didn't expect to go on Love Island and actually find love. When you watch Love Island you don't often see those conversations, so you don't think it's happening”.

Sanam continued, “But with me and Kai we would speak about our families, our values, future, we connected on a deeper level that I didn't think would happen in the villa. They need to show that more actually”.

RTÉ has confirmed that it has suspended one of its board members following a recent investigation into Ryan Tubridy’s pay.

The Director General of RTÉ, Dee Forbes, has been suspended from her role at the broadcaster. The RTÉ Board chose to announce the news in a statement to the public earlier today.

“The RTÉ Board confirms that Dee Forbes, the Director General was suspended from her employment on Wednesday 21 June 2023,” the broadcaster wrote.

“There are processes on-going and RTÉ must be mindful of its legal responsibilities and the rights of individuals,” they continued, before adding that “RTÉ will not be commenting further on this issue at this time.”

Yesterday evening, RTÉ confirmed that they had recently ordered an investigation into its finances, after it was discovered that the true income of TV and radio presenter Ryan Tubridy had been falsely reported to the public.

Between 2017 and the beginning of this year, the former host of The Late Late Show received an extra €345,000 in payments, on top of his RTÉ salary. 

The extra payments went undisclosed for six years in annual pay statements. Before the misleading payments were revealed to the public, Mr Tubridy was already known to be the highest-paid member of staff in RTÉ.

Following the announcement by RTÉ yesterday, Mr Tubridy released his own statement in which he expressed that the findings of the investigation were “surprising” to him, and that he “can’t shed any light on why RTÉ treated these payments in the way that they did.”

Mr Tubridy has stayed off air today, with comedian Oliver Callan replacing him on his RTÉ Radio One morning show. 

Unions in RTÉ are to hold an emergency meeting today to discuss the revelations.

Gemma Atkinson and her fiancé Gorka Marquez have revealed they can’t settle on a baby name that they both agree on. 

The couple, who first met on Strictly Come Dancing, announced they were expecting their second child together, a baby boy, back in January and as Gemma’s due date nears, they are yet to decide on a name for their son. 

Gemma took to her Instagram Stories to share with her 1.8M followers that she has a baby name in mind but Gorka isn’t keen on it.

Posting a video of her fiancé with a sad face filter on, Atkinson wrote, “He’s sad we haven’t got a name yet”.

She then explained the couple’s predicament by saying, “We’re talking names and I want Rocky Marquez, I love Rocky and Gorka won’t have it”.

Gorka chimes in to joke that the couple should name their son Stallone after Rocky movie star Sylvester Stallone, or Rambo as it’s his favourite movie.

“Rocky Marquez sounds good”, ensures Gemma but Gorka can’t agree.

The 38-year-old then admitted, “It’s hard though naming a human isn’t it. We only had a girl's name picked out”.

“We had Vida for a girl because Vida is ‘life’ and Mia is ‘mine’ in Spanish so we were going to have ‘my life’, but it’s a little boy”.

“Rocky’s definitely not going to happen, he [Gorka] won’t have it. I don’t know, it might change when we see him, who knows?”, the former Hollyoaks star adds.

When announcing her pregnancy, the actress shared a collection of photos showcasing her blossoming baby bump. 

She revealed, “Impossible to hide my belly any longer. I’ve officially “popped.” Our baby boy will be joining our family later this year. We feel so incredibly blessed and Grateful to be on this journey again”.

Gemma and Gorka are already proud parents to three-year-old Mia, who they revealed is ‘thrilled’ to become a big sister.

Jacqueline Jossa has been spilling all the details about her recent cameo!

EastEnders viewers were shocked last night when the actress made a surprise re-appearance on the BBC soap.

Jacqueline, who is best known for playing Lauren Branning, reunited with former co-star Thomas Law. 

Thomas, who left EastEnders in 2010, has returned to the role of Peter Beale – Lauren’s former partner and the father of her son Louie.

Viewers were filled in on Peter’s backstory since he was last seen on screens last year. Since his departure, Peter has been living in France with son Louie, alongside his parents Ian Beale and Cindy Beale.

Last night’s episode showcased Peter reuniting with Lauren in France, and the pair discussed if there was a possibility of them rekindling their relationship.

While producers have confirmed that Ian, Cindy and Peter will all return permanently to Albert Square soon, EastEnders fans will be disappointed to hear that Lauren will not be joining them.

However, actress Jacqueline has now broken her silence on the matter and has shared a few snippets from behind the scenes.

Taking to Instagram earlier today, the 30-year-old posted several snaps of life on the EastEnders set, including selfies with castmates Thomas Law and Adam Woodyatt.

“Surprise,” Jacqueline teased at the beginning of her caption.

“Photo bombed by the one and only @adamwoodyatt !! Glad to see you guys back where you belong,” she continued.

The mum-of-three also expressed how delighted she is to see Thomas’ return. “@thomaslaw44 was my first Peter, I remember watching the show when I was younger and rooting for Lauren and Peter, before I even knew I would ever be her,” she gushed.

Jacqueline officially left EastEnders in 2018, but Lauren’s character briefly returned last December to attend Dot Cotton's funeral.

In January, Jacqueline shut down rumours of a permanent return to the soap. “That’s also not me saying I would never go back, when and if the time is right, I would love to,” she added at the time.

Love Island fans were left shocked following last night’s episode after it ended by revealing a previous contestant will be heading back into the villa as a bombshell.

Reactions from fans of the show have been shared online after it was announced that Kady McDermott would be returning to Love Island in tonight’s episode.

Kady appeared in series 2 of Love Island back in 2016 where she ended up in third place alongside Scott Thomas.

Now that she is making her way back onto the show, fans have been divulging their thoughts on social media. 

One viewer wrote, “Queen is back”, while a second penned, “Best bombshell ever”.

“I love when they bring back past contestants, Kady was so entertaining on her season”, wrote a third Love Island fan. 

Previous contestants also shared their opinions on Kady going back into the villa with Danica Taylor saying, “Ahhh yes GIRL”, and Tasha Ghouri adding, “Oooooft what a plot twist”.

Love Island’s official Instagram page posted a teaser to reveal Kady would be heading back into the villa to find love last night.

They announced, “Major Bombshell Alert. #LoveIsland legend Kady is returning to the Villa to find her future hubby”. 

They also shared who she is looking forward to getting to know by adding, “She's got her eyes on Zachariah, Tyrique and Mitchel”.

When asked why she agreed to head back into the villa, Kady admitted, “Not many people can say they’ve been on Love Island, let alone have done it twice!”.

“I think I'm known from season 2 for being so chaotic. People always ask, ‘Do you have regrets?’, expecting me to say yes, but I was so true to myself and I was 100% authentic”.

She added, “I'll still be like that now, but seven years on, I am more mature. I'm still the fiery pocket rocket but I know what I want and what I don't want”.
