This mug cake is so simple to make and has a really light and delicate flavour.

What you’ll need:

  • 3 tbsp. plain flour
  • 3 tbsp. ground almonds
  • 1 egg
  • 2 tbsp. milk or almond milk
  • 1/2 tsp. baking powder
  • 2 tbsp. sugar
  • Pinch of salt
  • 1 tsp vanilla essence

What you’ll need to do: 

  1. In the mug you are using, combine the dry ingredients well.
  2. In a separate bowl, beat the egg with the milk.
  3. Add the wet ingredients into the mug and mix well.
  4. Place the mug into the microwave for 2 minutes.
  5. Enjoy with some fresh berries and Greek yoghurt.

Summer is on the way and that means juicy seasonal strawberries have landed in the shops. Yum!

These easy-to-make strawberry ice lollies will be a heavenly treat for those lovely long evenings ahead.

What you’ll need:

  • 250g strawberries
  • 100ml natural yoghurt
  • 1 teaspoon honey
  • Ice lolly moulds and lolly sticks.

What you’ll need to do:

1. Place all of the ingredients into a food processor and blend until smooth.
2. Taste, and add a little more honey if you think you need to.
3. Divide the strawberry mixture between four ice lolly moulds, then pop a stick into each one.
4. Put the ice lollies in the freezer for at least four hours or until solid.

These coconut-chocolate bars are so easy to make and handy for sweet snacks.

This recipe uses milk chocolate but if you wanted to make it a little healthier you could swap this for darker chocolate.

What you’ll need:

  • 160g dessicated coconut
  • 250ml condensed milk
  • 300g milk chocolate

What you’ll need to do:

  1. Combine the condensed milk and coconut milk, adding more condensed milk if the mixture seems dry.
  2. Flatten into a baking tray and chill for an hour.
  3. Cut into bar shapes.
  4. Melt chocolate and dip the bars into the chocolate, coating.
  5. Chill bars until chocolate has hardened.

Surprise your work colleagues with these delicious and easy to make spiced mixed nuts.

What you’ll need:

  • 1 tbsp olive oil
  • 150g unsalted  mixed nuts
  • 1/2 tsp sea salt
  • 1/2 tsp chilli powder
  • 1/2 tsp paprika
  • 2 tsps light brown sugar

What you’ll need to do:

  1. Gently heat the oil in a frying pan over a low heat.
  2. Add the nuts, salt, chilli and paprika and cook for about 8 minutes.
  3. Add the sugar and cook for a further 2 minutes.
  4. Spoon the cooked nuts onto a sheet of baking paper and dab away the excess oil.
  5. Pour into a bowl and enjoy.

It may seem like there are a lot of ingredients in this but these are mostly cupboard essentials like spices that you will have anyway so don’t worry! It is one of the fastest and cheapest curries to throw together and you will find yourself making it again and again after a long day at college or work.

What you’ll need:

  • 100g red lentils, washed and rinsed
  • 1 tbsp butter/olive oil
  • Vegetable stock
  • 3 garlic cloves
  • 1 med onion, chopped finely
  • 1 tsp fresh ginger, grated
  • 1 red chilli, chopped finely
  • 1 tsp cumin
  • 1 tsp tumeric
  • 1/2 tsp cinnamon

What you’ll need to do: 

  1. In a saucepan, heat the butter or the oil and add the ginger, chilli, onion and garlic.
  2. Allow to soften slightly and all of the spices, heating to release their aroma.
  3. Add the washed lentils and combine with the flavours for about 3-4 mins.
  4. Cover the lentils with the veg stock and place the lid on. Cook over medium heat until the lentils have softened.
  5. For the last 10-15 mins of cooking, remove the lid allow the daal to thicken for a nice curry consistency. Add more stock if the lentils aren’t softening or it seems dry.
  6. Garnish with the fresh coriander and serve with some fluffy rice or naan bread.

This pesto recipe is really easy to make – just blend all of the ingredients together and use in pasta, on veg or even as a dip for crackers or crudités.

What you’ll need:
Serves 2-3

  • Handful of walnuts, whole/halved/crushed
  • 1 bag of rocket
  • Handful of fresh basil
  • 1 garlic cloves
  • Juice of one lemon
  • 3 tbsp olive oil
  • salt and pepper

What you’ll need to do: 

  1. Put all of the ingredients into a bowl and use a hand blender to blend the ingredients together.

This simple recipe is economical and easy to put together, so next time you have a guest coming over or a gathering to attend before payday, this recipe is for you!

What you’ll need:

  • 250g dark chocolate
  • 200g digestives, broken into small pieces
  • 120g butter
  • 2 tbsp golden syrup
  • 100g marshmallows, chopped
  • 2 Crunchies, broken into small pieces

What you’ll need to do:

  1. Line a baking tray or even a cake tin with some parchment paper.
  2. Melt the chocolate with the butter and golden syrup in a glass bowl over a saucepan of simmering water. Melt slowly.
  3. Remove from heat when melted and stir in the biscuit, marshmallow and Crunchie.
  4. Pour mixture into your prepared tin and allow to set in the fridge for about 2-3hrs.
  5. When it has set, cut it into squares, bars, slices – whatever you want!
