You can now have this delicious Italian treat, thanks to this simple dinner recipe.

What you’ll need:

  • 400g fusilli pasta
  • 100g frozen peas
  • 50g butter
  • 50g plain flour
  • 600ml milk
  • 1 tsp. mustard
  • 2 cans tuna
  • 4 spring onions
  • 198g can sweetcorn
  • 100g grated cheddar

What you’ll need to do:

  1. Bring a pan of water to the boil. Add the pasta and cook following pack instructions, until tender. Add the peas for the final three minutes cooking time.
  2. Meanwhile, melt the butter in a pan over a medium heat. Stir in the flour and cook for two minutes. Add the milk, whisking constantly, then slowly bring to the boil, stirring often, until sauce thickens. Remove from the heat, add the mustard and season well.
  3. Heat the grill to medium. Drain the pasta and peas, then return to the pan and stir in the tuna, spring onions, sweetcorn and sauce.
  4. Tip into a shallow baking dish, top with the cheddar and cook under the grill for five minutes or until golden and bubbling.

Summer may be coming to an end, but that doesn’t mean that you still can’t make the most of August with this delicious side dish.

What you’ll need:

  • 1 packet of cream cheese
  • 1 seven ounce jar marshmallow fluff or packet of melted white marshmallows
  • Juice from one orange

What you’ll need to do:

  1. Take cream cheese out of fridge and let soften for a few minutes
  2. When the cream cheese is soft enough to blend, add the marshmallow fluff/melted marshmallows and orange juice and then beat the mixture till smooth.
  3. Serve with some of your favourite sliced fruits and dip away.

Tip: Strawberries and green grapes are perfect for this dip but many other fruits will work when it comes to this delicious side dish too.

Met Éireann says this heatwave is set to continue – so what better way to make the most of the sun than by munching on these delicious frozen treats!

What you’ll need:

  • 1 packet of oreos
  • 1 package cream cheese, softened
  • 1 can sweetened condensed milk
  • 2 tsp peppermint extract
  • Green food colouring
  • 1 carton of whipped cream

What you’ll need to do:

  1. Lightly butter a pan or use a non-stick pan. Set aside.
  2. In a blender pulse the entire package of oreos until fine crumbs.
  3. Press the crumbs into the bottom of the pan and spread them evenly along the bottom. Press them down with the back of a spatula.
  4. Use the same bowl to mix the cream cheese. Using hand mixers, mix the cream cheese for about three-four minutes until very creamy. Slowly add in the sweetened condensed milk and continue to mix with the hand mixers for another two-three minutes.
  5. Using a spatula scrape down the sides and continue to mix for another minute.
  6. Mix in the peppermint extract and food colouring. Do as much food colouring as you want until you reach the desired colour you want your cheesecake to be.
  7. With the spatula, fold in the whipped cream. Be careful to not over mix with the rest of the ingredients.
  8. Freeze overnight or for at least eight hours.
  9. Serve directly from the freezer and return to the freezer as soon as you are finished serving.

Brownies stuffed with a caramel centre? Sounds like the perfect combination to us! And now you can have your own delicious batch, thanks to this easy recipe.

What you’ll need:

Caramel sauce

    • 175g caster sugar
    • 150ml double cream
    • 10g unsalted butter
    • large pinch of  sea salt
    • 180g plain flour
    • 3 tbsp cocoa powder (like Green and Blacks)
    • 1/4 tsp salt

Brownie mixture

  • 300g dark chocolate
  • 150g unsalted butter
  • 220g light brown sugar
  • 150g caster sugar
  • 4 large eggs
  • 1 tsp vanilla extract

What you’ll need to do:

  1. To make the caramel place the sugar into a medium saucepan, set over medium heat and cook until the sugar melts and caramelises.
  2. Pour in half the cream and all the salt, be careful the mixture will bubble up violently. Take off the heat and allow to cool.
  3. For the brownies preheat the oven to 180°C. Grease a pan and line with a strip of parchment leaving about a two inch overhang along the long edges to make removing the brownies easier.
  4. Sieve the flour, cocoa powder and salt together into a medium bowl and set aside.
  5. Place the chocolate and butter into a heatproof bowl and set over a pan of simmering water, making sure the bowl doesn’t touch the water, and stir occasionally until the mixture is fully melted.
  6. Take the bowl of the heat and add the eggs and sugars and beat until the mixture is smooth. Sieve over the flour mixture and gently fold together.
  7. Divide the mixture equally in half and spread out the first half into the prepared tin. Then pour the caramel over the batter leaving a border around the outside. You now need to spread the remaining batter over the caramel.
  8. Bake in the preheated oven for 25-30 minutes.
  9. You can test that your brownies are done by inserting a fork or skewer in the middle and if it comes out with just a few moist crumbs attached, your brownies are done.
  10. Allow to cool completely before using a sharp knife to cut into squares.

Why eat out with the girls, when you can all have a night in with some mini pizzas? And now, thanks to this easy recipe, you don’t even have to load up on the frozen brands. Yay!

What you’ll need:

  • ½ tsp active dry yeast
  • 285g white spelt flour
  • ½ tsp salt
  • 1 tbsp olive oil
  • 1 onion
  • 1 clove garlic
  • 2 tbsp capers
  • 300g tomatoes
  • 1 tsp dried oregano
  • Tomatoes

What you’ll need to do:

  1. Preheat the oven to 200°C
  2. For the bases, mix the yeast with 170ml of lukewarm water, cover and set aside in a warm room for about 15 minutes.
  3. Meanwhile make the sauce. Heat the oil in a pan and gently fry the onion and garlic until the onions start to go soft. Add a splash of water to cool then add the remaining ingredients.
  4. Simmer for 15 minutes, or until thickened. Set aside until ready to construct the pizzas.
  5. For the bases, whisk the yeast and water mixture and set aside for another five minutes.
  6. Place the spelt flour and salt in a large bowl. Make a well in the centre and pour in the yeast mixture. Mix to combine then turn out onto a lightly floured work surface and knead for 5–10 minutes until smooth and silky to the touch, adding a little more flour if necessary.
  7. Divide the bread dough into eight pieces, roll each piece into a ball and place on a baking tray lined with baking parchment and flatten into a circle.
  8. Smear on some tomato sauce followed by your choice of toppings and bake for five minutes. Rotate and bake for a further five minutes, or until the base is crisp.

This recipe is not only easy to make but also makes the perfect summer snack.

What you’ll need:

  • 125g plain flour
  • 25g cocoa powder
  • 1 tsp. baking powder
  • 1 egg
  • 60g sugar
  • 2 tbsp. butter
  • 100ml milk
  • 500g icing sugar
  • 1/2-1 tbsp. warm water
  • 25g chocolate chips

What you’ll need to do:

  1. Preheat the oven to 160°C, sieve the cocoa powder, flour and baking powder into a bowl.
  2. Mix the egg, milk, butter and sugar together in another bowl.
  3. Pour the egg mixture into the first bowl, then add chocolate chips. Mix until combined but still lumpy.
  4. Spoon mixture into cake cases and put the tray in the oven at 160°C for 20 minutes.
  5. You can check the muffins are set by cracking the top of the cupcake, if not quite set put back in for a further 10 minutes.
  6. Leave muffins to cool and serve.

This refreshing and tasty raspberry sorbet takes minutes to put together and is a real crowd pleaser.

What you’ll need: 

  • 500g fresh raspberries
  • 100g caster sugar
  • 200ml water
  • Juice of half a lemon

What you’ll need to do:

  1. In a pan, make a syrup with the sugar and water. Allow to cool.
  2. Add the raspberries, syrup and lemon juice to a food processor and blend smooth.
  3. Run the mixture through a piece of cheesecloth to get rid of the seeds.
  4. Freeze the mixture in a lunchbox.
  5. When it is frozen, add it to a food processor and blend until smooth. This will ensure any frozen pieces you may have will disappear.
  6. You could also ensure you mix the sorbet every half an hour and break up any ice crystals that may be forming, rather than returning it to the processor before serving.
  7. Serve.

What you’ll need:

  • 1 ripe avocado, cut in half, skin and stone removed
  • 1 x 400g can chickpeas, drained and rinsed
  • 1 garlic clove, peeled, finely chopped
  • 1-2 lemons, juice only
  • ½ tsp Tabasco
  • ½ tsp ground cumin
  • Sea salt,  to taste

What you’ll need to do:

  1. Blend all of the ingredients in a food processor until smooth.
  2. Transfer the avocado hummus to a bowl and cover with cling film.
  3. Chill in the fridge for one hour.

This salad is simple and delicious.

The cheese has a deep, salty flavour and goes so well with the fresh greens.

What you’ll need:

  • Handful of basil
  • 4-5 cherry tomatoes
  • 2-3 slices of Halloumi
  • Drizzle of olive oil and balsamic vinegar

What you’ll need to do:

  1. In a bowl, combine the basil, cherry tomatoes, olive oil and balsamic vinegar.
  2. Season as needed and set aside.
  3. Heat a tbsp. of oil in a griddle pan and when it is hot place the slices of cheese on it.
  4. When the slices are golden on each side, remove from heat.
  5. Arrange salad on a plate, placing the cheese on top and enjoy with some crusty bread.

Freshly baked banana bread is delicious on its own, but add chocolate and we’re sold!

What you’ll need:

  • 250g plain flour
  • 25g cocoa powder
  • 1 tsp baking powder
  • ¼ tsp bicarbonate of soda
  • Pinch salt
  • 200g golden caster sugar
  • 2 very ripe bananas, peeled, mashed
  • 2 eggs, beaten
  • 125g butter, melted

What you’ll need to do:

  1. Preheat the oven to 180C/350F/Gas 4. Grease and line a loaf tin.
  2. Sift the plain flour, cocoa powder, baking powder, bicarbonate of soda, salt and sugar into a large bowl and mix well.
  3. Mash the bananas in a separate bowl, stir in the eggs and melted butter.
  4. Fold the banana mixture into the flour mixture until just combined. Fold in the chocolate and spoon the mixture into the loaf tin.
  5. Bake for 50-60 minutes, or until the cake is risen and a knife stuck into the centre comes out clean.
  6. Cool for 10 minutes and serve.

Us Irish girls love our tea – so why not try this super refreshing iced tea alternative while the sun shines.

What you’ll need:

  • 2 litres of water
  • 10 teabags
  • 2 tbsp caster sugar
  • 300ml fresh lemon juice
  • 1 bag of frozen raspberries

What you’ll need to do:

1. Bring water to a boil
2. Remove pot from heat and add all the tea bags, letting them steep for 3 minutes before removing.
3. Add all the ingredients and let stand for 2 to 3 minutes, stirring occasionally, until raspberries have thawed.
4. Pour tea through a fine strainer into a few large pitchers.
5. Serve up with lots of ice.

Sweet potato fries are not only healthy but can be great source of nutrients too. Here is an easy recipe, which will enable you to have this side order, in no time.

What you’ll need:

> 3 large sweet potatoes
> 60 ml olive oil
> 1-2 tbsp sugar
> 1 tbsp salt

What you’ll need to do:

  1. Preheat the oven to 230°C.
  2. Peel the sweet potatoes and cut off the ends. Cut the potatoes in half lengthwise and then, in half crosswise. Cut each piece into wedges.
  3. Put the sweet potatoes into a large bowl and add the oil. Then with your hands mix the sweet potatoes with all of salt and sugar.
  4. Spread the sweet potatoes out in a single layer on top of a baking sheet. Make sure each slice is evenly coated in the olive oil mixture.
  5. Bake in the oven for about 30 minutes. After the first 15 minutes, remove the baking sheet from the oven and turn over all of the sweet potato slices. After you have turned them over return them to the over and let them bake for another 15 minutes until they are well browned.
  6. Make sure the fries have cooled for five minutes before serving.
