Forget chocolate, frozen yoghurt bark is our new (healthy!) treat

Ever get in that mood where you just need something sweet to ease those sugar cravings? Yup, us too.

The hard part is, of course, choosing a snack that's not going to send your blood sugar skyrocketing or ruin all your hard dieting work.

That's why we LOVE the idea of frozen yoghurt bark, made from chilled greek yoghurt instead of chocolate. It's oh-so moreish, but fairly guilt-free too.

The recipe below uses mixed frozen berries, cacao nibs and coconut flakes but the options in terms of toppings or add-ins are endless.

You can use any combination of fruit-and-nut flavourings to add sweetness and crunch. Some of our favourites include raspberry and pistachio; cranberry and walnut or even slices of frozen banana with peanuts.

Frozen Yoghurt Bark

Ingredients

  • 500g greek yoghurt
  • 2 tbsp honey
  • 100g frozen mixed berries (eg. blueberries, raspberries, strawberries)
  • 2 tbsp cacao nibs (or any chocolate chips/pieces you prefer)
  • 1 tbsb coconut flakes

Method

  1. Line a baking tray with parchment paper or foil
  2. Mix yoghurt, honey, cacao nibs and coconut flakes together in a bowl
  3. Spread 3/4 of mixture evenly onto baking tray
  4. Drop berries onto mixture
  5. Spread remaining yoghurt mixture on top
  6. Freeze for 1.5 hours
  7. Cut into bars or squares.

These can be wrapped in clingfilm and frozen for later use if you wish
