A filling and healthy breakfast is so important if you have a busy day of work or college ahead.

If you're a fan of the snooze button though, it can be hard to make time for the most important meal of the day.

Rather than grabbing a muffin and coffee on your way to the bus, take an extra minute or two at home to make something from scratch. It's much quicker – and simpler – than you might think!

Here are just three ideas we love for quick weekday breakfasts:

Smashed avocado and egg on toast

Ingredients

  • 2 slices wholewheat bread
  • 1/2 a ripe avocado, smashed with a spoon
  • 1 egg
  • Salt and pepper

Method

  1. Spread avocado onto toasted bread.
  2. Top with a poached egg.
  3. Add a sprinkle of salt and black pepper.

Quick scrambled eggs

Ingredients

  • 2 eggs
  • Chopped veg of your choice eg. tomatoes, spinach, red peppers
  • Salt and pepper

Method

  1. Beat eggs in a microwave-safe bowl with a fork.
  2. Stir in chopped veg.
  3. Heat for 30 seconds on high and stir.
  4. Heat for another 30 seconds and stir again.
  5. Add a sprinkle of salt and pepper.

Berry and cinnamon smoothie

Ingredients

  • 75g fresh/frozen blueberries
  • 75g fresh/frozen raspberries
  • 75g low-fat natural or vanilla yoghurt
  • 125ml semi-skimmed milk
  • 1/2 teaspoon ground cinnamon

Method

  1. Add all ingredients to a blender and blend until smooth.
  2. Pour into a glass and enjoy!

*If using fresh fruit instead of frozen, add a couple of ice cubes and use just 100ml milk.
