Much as we love checking out new clean-eating recipes and meal ideas, sometimes it can be hard to recreate exactly what we see on Instagram or Pinterest.

With everyone from Lea Michele to Beyoncé and Jay-Z adopting a vegan lifestyle in recent years, the plant-based movement is gaining huge popularity, but without a personal chef at your disposal is it really easy to stay on track?

Obscure ingredients, elaborate recipe descriptions and the cost of certain products mean that not every recipe is suitable for throwing together at home when we're in need of something healthy and tasty. Luckily, there are a number of great sources out there for simple, no-fuss recipes that are still in keeping with a vegan or plant-based diet. 

One of our favourites is The Irish Health Diaries, and they've shared one of their go-to recipes with us, for tasty veggie burgers with minty pea mash. Check it out.

Veggie Burgers with Minty Pea Mash

Serves 2

For the burgers


  • 2 courgettes
  • 2 carrots
  • 4 breakfast mushrooms
  • 4 tbsp. pine nuts
  • 2 sprigs fresh thyme or 1 tsp. dried
  • 4 slices bread, ground into breadcrumbs (if you're vegan, check that the bread does not contain eggs, milk or honey)
  • Seasoning eg. salt, black pepper, chilli flakes


  1. Grate the carrots and courgettes and chop the mushrooms into small pieces.
  2. Heat up some oil in a pan and tip in the veg and pine nuts to soften for about ten minutes.
  3. Mix the veg with the breadcrumbs and when combined create burger shapes with your hands and set on a plate.
  4. Refrigerate for about an hour until firm.
  5. Heat some oil in a pan and cook the burgers until golden and cooked through.


For the minty mash


  • 4 handfuls of frozen peas, defrosted and cooked
  • 2 tbsps of chopped fresh mint
  • Salt and pepper to season


  1. In a bowl, add the cooked peas and blend with the mint and season to taste.
  2. Serve with the burgers and some quinoa on the side if desired.
