Deliciously sweet caramel popcorn recipe

This caramel popcorn recipe is not only easy to make but will stop you from wanting to buy any ready-made popcorn again.

What you’ll need:

  • 100g air popped popcorn
  • 200g light brown sugar
  • 80g corn syrup
  • 115g unsalted butter
  • ½  tsp of salt
  • ½ tsp baking soda

What you’ll need to do:

  1. Preheat your oven to 100°C. Spread your freshly popped popcorn on two baking sheets.
  2. Combine the sugar, corn syrup, butter and salt in a medium saucepan over a medium-high heat. Stir constantly and bring to the boil for five minutes.
  3. Remove from the heat and quickly stir in the baking soda. Pour the caramel over the popcorn and stir gently until all of the kernels are covered.
  4. Bake for one hour, stirring every 20 minutes. Allow to cool on the pan and break apart large clusters. Cover the popcorn tightly once cooled; it should stay fresh for up to two weeks.
