This caramel popcorn recipe is not only easy to make but will stop you from wanting to buy any ready-made popcorn again.
What you’ll need:
- 100g air popped popcorn
- 200g light brown sugar
- 80g corn syrup
- 115g unsalted butter
- ½ tsp of salt
- ½ tsp baking soda
What you’ll need to do:
- Preheat your oven to 100°C. Spread your freshly popped popcorn on two baking sheets.
- Combine the sugar, corn syrup, butter and salt in a medium saucepan over a medium-high heat. Stir constantly and bring to the boil for five minutes.
- Remove from the heat and quickly stir in the baking soda. Pour the caramel over the popcorn and stir gently until all of the kernels are covered.
- Bake for one hour, stirring every 20 minutes. Allow to cool on the pan and break apart large clusters. Cover the popcorn tightly once cooled; it should stay fresh for up to two weeks.
